When cold cuts meet the flame.
For our fifth At The Table, we bring together Cure & Pickle’s slow-made charcuterie and Andy’s fire-driven cooking.
Cold cuts sit at the center of the table, with everything else built around ferments, fire, chilli, herbs, and very good farm-to-table pork.
This is what we love to eat - meant to be shared, poured generously, and eaten slowly.

Fromage de tête is one of those traditional products that really embodies a nose-to-tail approach. Literally translating to “head cheese”, it uses, you guessed it, the pigs head. (We’re told it’s very similar to Thịt Đông)
This is our Fromage de tête during the R&D process.
Version 1 (2nd pic) had the vibe and taste. Version 3 (1st pic) has the vibe, taste and structure.
What we chased:
– prettier mosaic
– cleaner slice
– firmer (but tender) set
– brighter seasoning
The flavour was there early on. The structure took a lot longer to master!
