Traditional Mauby
* Mauby Bark
* 2 pieces Cinnamon stick
* 3–4 pieces Star anise
* 1 tsp Cloves (whole)
* 1 small piece Dried orange peel (optional)
* 8 cups water
* 2 cups Brown sugar (adjust to taste)
Bring all ingredients, sans sugar, to a boil (4 of the 8 cups of water), reduce heat and let simmer for at least 20 minutes. For a more flavorful/bitter mauby, let the bark steep for a few hours or overnight. Strain, add the other 4 cups of water. Add sugar to taste, stir until dissolved. Refrigerate until cold.

Join us at MITA on March 8th for a special evening bringing together incredible talent behind the bar and in the kitchen.
Featuring guest bartenders Lucy Valenti @lucymvalenti of @residentsdc and Princess Johnson @yopjay of Allegory @allegory_dc , alongside Chef Amy Brandwein @chefamybdc of Centrolina @centrolinadc collaborating with our own Chef Tatiana Mora @tatianamorarangel .
The evening will also highlight women-led brands including @zacaparumusa , @yolamezcal and @condesagin through a special cocktail program.

With nearly two decades in the hospitality industry and as a DMV native, @yopjay (PJ) has built a reputation as one of D.C.’s most renowned bartenders.
Formerly of the iconic Hamilton and the popular Drink Company pop-up bars, she has quietly established herself as a top talent in the city’s bar scene.
Her skill and expertise have been recognized through her selection for coveted industry experiences, including serving as a CAP Red Coat and a @camp_runamok counselor, as well as attending Tiki by the Sea to further strengthen her bartending education. She was also a Top 10 finalist in the CCB competition.
At Allegory, Princess expertly blends her Trinidadian heritage into her cocktails, creating unique and unforgettable drinks. Her passion and deep knowledge of the craft make her an invaluable asset to this team.
