Following our hunting success on some cunning Sika deer from the forests of the Central North Island, in our latest episode - Tom & Dariush whip up some delicious Sika skewers paired with a romesco sauce. Given Sika and Wapiti are closely related genetically and share a common ancestor (you wouldn't pick it though looking at their body sizes!), it's no surprises the @withwild_ team were big fans of our hard-earned Sika venison! This season we’ve partnered with the passionate wild game foodies @withwild_ and we’re lucky enough to have top chefs @dlolaiy and @tom_hishon guiding us through a range of recipes using the wild proteins we’ve gathered throughout the year - straight from NZ’s backcountry supermarket. WithWild joined the @nzicc team last week to celebrate the opening of the NZ International Convention Centre, alongside more than 650 guests. Chef Rob Cullen and his team delivered an incredible range of truly unique New Zealand culinary experiences — offering a glimpse of what the menus are showcasing. Shout out to Chef Rob, Prue Daly, GM, and the NZICC team for inviting smaller, unique producers with world-class products to be part of their story. We feel privileged to showcase our products to the world through the doors of the NZICC. Wapiti extraction has begun for 25/26 season. At least 1000 animals are taken each year from within the 175000 hectare area @fiordland_wapiti_foundation manage. This area is less than 5% total Fiordland national park , yet more than 25% of all deer commercially harvested within ALL of Fiordland, are from within the Wapiti area. Combined with predator trapping, the Wapiti area has the healthiest forests and the most birdlife within mainland Fiordland national park. Ecological data is gathered by @fiordland_wapiti_foundation and govt auditors review that information. More than 1000 animals are taken out if necessary.
