✨🍝 THE PAIRING SERIES 🍝✨ This week, we are taking a closer look at SCHLADO, a light red that has a knack for getting the party started. Mischievous, earthy, showing hints of smokiness and/or spice, this wine has quite the personality, without compromising on lightness and quaf-faktor. We always advise getting two bottles; one to drink while you are barbecuing, the other one for when you sit down when the food is ready. 🔥 Schlado pairs with a large palette of flavors, it loves a roasted veg (summer or fall edition), mushrooms, sausages (dry or wet). It will also be a great companion to offal, like grilled hearts, liver pâté, tripes in an oily tomato sauce. Try it over ratatouille/caponata, muhamara, romesco sauce, spicy tomato chutney…or just a bag of ketchup crisps. Oh, and PIZZA! 🍝🥫🍕 Illustrated here: 1. A big plate of fresh pasta, rolled in spicy tomato sauce, covered in loads of cheese 2. Roasted oyster mushrooms, burnt onions, chicken jus, parsley oil 🧅 3. Radicchio! Here tossed in a deep purple dressing made with reduced beetroot juice, inspired from a salad we had @jaja.berlin last fall and have not stopped thinking about since. 💫 HOFFEST FOOD 💫 Here's a little background story about why and how we chose BBQ for the food offer for our first ever open cellar day. If you have followed this channel for a while, you know we love cooking with fire! 🔥 We had incredible feedback for the food and it was very motivating to try and top this next year. We are already discussing the next menu. Nothing suprising, we are always discussing menus anyway. The cookie recipe was adapted from our favorite pastry book sift written by @nicolaalamb 🍪 And shout out the best kitchen help there ever was, our friend @livfleischhacker 💞 Comment PICKLE to get a jar through the mail. Our first ever Hoffest happened a few weeks ago, and the pictures taken on this day captured the effervescent energy in the air 🎆 Hosted by us, @shenate_ and @weinhofamnussbaum , it was a sunny April day that brought together people from around here and beyond, and we are so happy with the turnout! It would not have come to life without our strong team of helpers, who poured their hearts into making this day special. 👩🏽‍🏫 PiWi School is in session again! 🍇 Buckle up, it's a dense topic. It is quite the challenge to make these videos as succint as possible, while delivering a staggering amount of information. But we are excited to try! 📕 We would have loved to make more distinction between resistance to fungus vs climate, or explain how breeders use their said little brush and scissors. Like a new variety, maybe it'll take us 25 years of videos to explain in more details. It's also safe to write here that although PiWis are not GMOs, modern research is hard at work to try and modify grapevines using gene editing. They are doing this with the goal to change so-called noble varieties' DNA to be more resistant to diseases without altering their taste too much and also to intensify the resistance of new varieties hitting the market. The first field trials of these grapes started a few years ago. 🧬 Share this reel with your wine loving friends, or with your skeptical uncle who thinks hybrids are a fad. 🖤 PiWi Lovers Inc.
