Fresh Spring Roll Salad with asparagus ribbons —
all the flavour of fresh spring rolls, without the rolling.
Crisp, layered, full of texture…
finished with the most addictive peanut dressing.
Made this salad using this fabulous salad set from @zylissofficial - their brilliant swift dry salad spinner and 3-piece peeler set was kindly gifted. The asparagus was also kindly gifted from @denheadfarmproduce who are based just outside Coupar Angus 🤍
Had the loveliest evening sipping signature cocktails at Le Monde in Edinburgh ✨🍸
From the moment we arrived, the atmosphere was warm and inviting, with that perfect mix of chilled elegance and fun energy. It’s the kind of place where you settle in and loose track of time - exactly what a great cocktail night should feel like.
We worked our way through a few of their signature cocktails …
🌶️ **Spicy Margarita** – the perfect balance of heat and citrus, with just the right kick.
💌 **Love Letter** – easily one of the cutest cocktails I’ve ever seen, served in a flute with an actual heart-stamped envelope attached (obsessed).
💫 **Always and Forever** – smooth, elegant and dangerously easy to drink.
❤️🔥 **Miss Possessive** – bold, playful and full of flavour.
Choosing a favourite was impossible — every single one was beautifully presented and absolutely delicious. The whole experience felt fun, stylish and just so good.

As the weather gets better and the garden fills with blooms, I find myself spending more and more time pottering in the outdoor kitchen & garden— arranging flowers, tidying things up and slowing down a little before the evening.
This Blushing Garden Gin Cocktail feels like the prettiest way to ease into a Saturday evening — floral, citrusy and softly sparkling with hibiscus & rose bitters, fresh lemon and elderflower tonic.

Recipe below if you’d like to make it tonight ✨
Ingredients
• 50ml gin
• Juice of ½ a lemon
• 15ml simple syrup
• 2 dashes Hibiscus & Rose Bitters from @thebitterclublondon
• Elderflower tonic
• Dried hibiscus flowers to garnish
Method
Fill a cocktail shaker with ice. Add the gin, lemon juice, simple syrup and bitters, then shake until chilled. Strain into a chilled coupe glass, top gently with elderflower tonic and garnish with hibiscus flowers.

One of the highlights of our stay at @theleddiehotel recently, was heading out along the coastline with @ezeeridersscot on one of their guided e-bike tours.
Such a brilliant way to experience this part of East Lothian — quiet roads, sea air, empty beaches and stretches of coastline we’d never have discovered otherwise.
And honestly, the e-bikes make it feel so easy and relaxed that you can properly take everything in along the way.
