🥇 While the foundation of my flavour is making caramel by cooking it 13+ hours, THE STAR of my flavour is
@vanislesalt with their flake sea salt from our pristine Pacific Ocean waters off Campbell River on Vancouver Island. It is all-natural and has the right balance of salinity to my home made caramel. Designing the flavour was never about how much effort and time goes into it, sure you can buy industrial prepared caramel or other salts, but for MY flavour and for YOU, I don’t take shortcuts to winning competitions around the world, why would I do that to you.

My flavour story starts . . .
* The flake salt from
@vanislesalt , over the years, have learned to add it at a specific temperature during the heating process…..a fine line between achieving that sweet & Salty final balance.
* No shortcuts, so learned from my Bella Gelateria days to take a specific brand of condensed milk, cook it for 13+ hours, resulting in the perfect balance of sweetness. Cooking it longer, it turns bitter (lessons I learned the hard way over the years).
* The dance and balance of sweetness, starts with the condensed milk, but I learned how to blend 5 different sugars from 4 different countries adding to the body, creaminess and controlling the final sweetness.
