Chatting LUA with Luke.
We met Luke back in 2023, when plans for @haystmarket were beginning to take shape. Little side note, did you know that you can find Luke’s famous Pho (based on his father’s recipe) and dumplings at Hay St Market? 🥟
Fast forward two and a half years and we’ve now had the pleasure of delivering LUA together (@luasydney ) on behalf of @doltonehospitalitygroup . A project years in the making that we are very proud to have brought to life.
Thanks for the chat, Luke. We love working with you and your hardworking team. And yes, we’re very happy to be regulars at LUA (to be honest, it’s hard not to be 🤤)

The story behind the handmade breezeway tiled wall at LUA.
First, a little throwback to early Feb when we were still onsite, as the story behind these tiles is something special.
Each of the 525 tiles were handmade in Vietnam, then shipped to Sydney and installed with incredible precision. A detailed process to ensure every tile sits perfectly level.
2,100 custom brackets were designed and installed to create the illusion of a floating wall, featuring a custom hand-tied rope detail.
We love how much this tiled wall transforms the space, catching and reflecting light in a way that feels almost fluid, like water in motion. A subtle nod to LUA, where fire meets water 💦
LUA IS LIVE 🔥
For months, LUA was filled with tradies, materials and the sounds of construction. Now, the space has officially transitioned and is filled with fresh produce, seafood, passionate chefs and happy diners.
LUA means Fire; Fire touches the food and warms the atmosphere 🔥
This is why we love what we do: we walk onto an empty site, and we leave it like this...

WELCOME TO LUA 🔥 @luasydney@lukenguyencooks ’s brand new harbour-side restaurant, located in the new Sydney Fish Market 🐟
We’re incredibly proud to have delivered this project for our valued client @doltonehospitalitygroup .
The space is a true showpiece: from Italian stone and authentic handmade Vietnamese tiles to the striking theatrical fire pit and sculptural ceiling above. There is detail everywhere you look in this beautiful new space, impeccably designed by the talented team @loopcreative .
And of course, the incredible food led by Luke, Barry and Jason and their talented team of chefs.

The old ductwork had definitely served its time, so we’ve brought in over 800 metres of fresh, shiny, expertly installed ductwork!
With 22 kitchen exhaust hoods now running smoothly, Hay St Market is almost all set to fire up the ovens! Huge thanks to Space Services for their incredible work in ensuring everything flows perfectly🔧✨
A lot of services mean a lot of core holes! @enviro_cut have cored over 300 holes… and counting! These holes are for our gravity drainage, gas and water supplies. We are running services to over 40 individual kitchens and bars... this is a BIGGGGG job!💥👀💪🏼

Precision in progress! Across 3,000sqm, every millimetre of the site is meticulously set out and check-measured to ensure all 47 eateries and bars are perfectly positioned. Big thanks to our friends at Slab Scan for surveying the slab to detect any services and reinforcement before we commence our slab penetrations. Proper planning = preventing problems 🙌🏼

As we close out 2024 and hang up our vests for a little break, we want to thank our clients and our incredible team for being part of our journey this year.
It's been a busy and rewarding one, and we’re looking forward to an even more exciting 2025. But first, it’s time to celebrate Christmas and enjoy the festive season.
In the new year, we’ll continue building momentum with the exciting Hay Street Market project.

Melbourne Cup Lunch 2024 // A heartfelt thank you to our clients for joining us at China Doll to celebrate Melbourne Cup Lunch. It was a fantastic afternoon filled with delicious food, great company, and a buzzing atmosphere down at the wharf. We loved seeing everyone embrace the spirit of the day, with some standout outfits earning prizes for Best Dressed!

@australianconcretefinishes came to the party with their Custom Trowel Machines to complete a full Carbon Fibre Scrub, finished off with a penetrating sealer. This floor is laying the (literal) groundwork for what’s to come 🙌🏼
