Most people will be familiar with the classic aubergine caponata, but when @ursulaferrigno stumbled across this verdant alternative in Palermo, she was thrilled. Gently simmered greens which still hold some bite, mopped up with wholesome hunks of bread. Best enjoyed in the sunshine ☀️
200g swiss chard, chopped
200g spinach, chopped
125g Tenderstem broccoli, trimmed
3 sticks of celery, chopped
200g spring greens, chopped
1 tbsp capers
3 cloves of garlic, thinly sliced
Grated zest of 1 unwaxed lemon
1 tbsp red wine vinegar
3 tbsp fruity extra virgin olive oil
Lemon wedges and country bread to serve
Place the vegetables in a large pan, with 200ml of water. Cook gently over a medium heat for 8 minutes. The vegetables should be al dente.
Drain the vegetables, then add to a serving bowl and dress with the remaining ingredients.
Garnish with lemon, and serve with your favourite bread.
Leftovers can be enjoyed cold the next day, and taste so good for the extra marinating time.
This rhubarb, rosemary and pistachio streusel cake is hands down a firm favourite with my family. If you are thinking of a Mother’s Day cake please can I highly recommend, it’s from my latest book Dolci Italiani @rylandpetersandsmall .
The recipe :
120g unsalted butter
125g light brown soft sugar
1 tbsp freshly chopped rosemary
3 large eggs
75g ground almonds
125 g 00 flour
1 tsp baking powder
300g fresh rhubarb chopped 2cm pieces
Icing sugar to dust
Yogurt to serve or gelato
Streusel topping
50g unsalted butter
75g OO flour
75g light brown soft sugar
50 g pistachios finely chopped.
20cm cake tin .greased and lined
Preheat the oven 160 fan
Method:
Cream together butter sugar and rosemary till light and fluffy.
Add the eggs one at a time mix well between each addition , mix the flour , baking powder,ground almonds together in a separate medium bowl, now add the flour mixture in three stages. Spoon the batter into the prepared tin. Prepare the streusel mixture now mixing all four ingredients together using your fingertips, it should look like large breadcrumbs.
Place half the streusel mixture on top of the batter, now add the rhubarb and press well into the cake batter and streusel , top with remaining streusel.
Bake for 50 mins in the middle of your oven until golden brown.
Leave to cool in the tin for 10 minutes.
Turn out of tin onto a wire rack. Dust with icing sugar.
Serve with yogurt or gelato.
Enjoy it’s scrumptious.
