Roasted Aubergine Biryani π¨π½βπ³ππΆοΈ
Layers of clove & cardamom basmati rice, spiced potato slices & roasted aubergine masala. Finished with a saffron and pomegranate seed jhol and topped with crispy bhaji bits ππ½
Troβs top tip - Cook your rice and potatoes at 75%. The rest of the cooking will happen in the clay pot. This is know as Dum Cooking (the pot is sealed with dough and steam cooked). Roasting and steaming creates a fused biriyani that is hearty and fluffy π€π½

Delicious roasted/charred, umami, garlicky, buttery, aromatic flavours! I never used to like this dish but itβs definitely one of my favourites now! A few simple ingredients and some spices & aromats make this beautifully dish. Tamarind Tandoori Roasted Cauliflower - Homemade tamarind sauce blended with tandoori spices coated the cauliflower which lay in the marinade overnight. Roasted until slightly charred
Tarka Chana Dahl - A mix of chana and yellow split lentils cooked the way my Ma taught me. Finished with a burnt Tarka of mustard seeds, cumin, hing & dried red chilli
Potato & Onion Pakoras - Chef Troβs special pakora mix fried until golden and crisp and finished with a spice blend. Big up Pops for the tips and tricks
Blood Orange Salad - Lambs lettuce, shredded carrot and pink radish in olive oil topped with segments of bloody orange. Zesty, sweet & and sherberty to refresh the palate finished with sesame seeds
Supper was served. Such a gorgeous evening full of beautiful guests, laughter and dishes to warm the soul. Huge thank you to my lovely diners for lighting the candle of the eve and being my food guinea pigs. Wholesome vibes and the love of serving and sitting with my guests. Samba style, chunky mixed veg sabji including sweet potato, carrots, aubergine & green beans. With hints of tamarind, warmth of garam masala & pops of sea salt. Finished with the freshness of coriander and served with (olive) buttery brown rice and homemade pickled carrots and radish giving a mouthwatering cut of acid.
Tip - cook your veg to the point of vibrancy. Never over. The key is to enjoy the colour and taste of the veg, the crunch, complimented by the spices and acids ππ½
Serve with a glass of Grinton Blanc Ombretta Italian natural Chardonnay
