The Tomato Bianco
”I’ve wanted to make a Bianco Soda for a long time, though it always missed something. Why the hell tomato water became the idea I really can’t remember but it really works perfectly with the wine and herbs of the bianco vermouth.”
Tims Tomato Water
Use Plum Tomatoes or San Marzinos — wash, clean and blend into a smoothie. Then add:
0,5% Sherry vinegar
0,2% Jalepo Tabasco
2% Salt
2% Acid
5% Sugar
mix all together and strain till clear liquid.
Add equal amount of Vermouth Bianco to the amount tomato water
