This weekend in Byron, we're keeping it simple. Friday through Sunday we keep cooking right through the afternoon. There’s no break between lunch and dinner, so whether you’re arriving for a late lunch or dropping in early for the evening, you can pull up a table and order whenever it suits. On Sundays, live music kicks off the afternoon before rolling into our much-loved Sunday Roast from 4.30pm, giving you every reason to gather a few friends, settle in and make the most of the weekend. Peri peri yellow beans, hazelnut brown butter and horseradish These yellow beans have been pimped up with @threeblueducks peri peri seasoning and a hazelnut brown butter which makes anything and everything taste better! We’ve been using @solidteknics pans in our venues for years. They’re unbeatable for durability and heat retention! Ingredients Handful of yellow beans, top and tailed 1tbs @threeblueducks peri peri seasoning 1tbs extra virgin olive oil Sea salt flakes Hazelnut brown butter: 125g unsalted butter ¼ cup roasted hazelnuts, roughly chopped Handful of fresh parsley, roughly chopped Zest a juice of half a lemon Sea salt flakes Freshly grated horseradish to serve Start with the hazelnut brown butter. Heat the butter for a few minutes until it’s foaming and goes a nut-brown color. Stir through the hazelnuts followed by the lemon juice, zest and the chopped fresh parsley. Season with some salt flakes, then keep warm and set aside. For the beans, pour the olive oil into a hot pan followed by the peri peri seasoning and the beans. Stir the beans making sure they are well coated in the oil and seasoning. Transfer the pan to a super hot oven for a few minutes until they get some good color and have slightly softened. Season with a touch of salt. Scatter the beans on your serving plate, top with a decent amount of the hazelnut brown butter and generously grate over some fresh horseradish.
