Blending Mexican, Asian, and American influences, his cooking pairs bold flavors with thoughtful technique and a rustic heart. Inspired in part by chef Mike Potowski, Eduardo learned to see food as a way to connect cultures through shared meaning. The name Azul Canela reflects that balance: Azul represents an upscale, rustic aesthetic, while Canela ties back to his Mexican roots and the warmth of home-style cooking.
Starting as a dishwasher, Eduardo built his approach on grit, discipline, and the mindset, “Stay humble, stay hungry.” Today, his seasonally evolving menu and focus on local ingredients continue pushing the boundaries of fusion catering while creating experiences rooted in flavor, culture, and care.
