Strawberries & Cream Cake 🍓
Cake:
* 3 cups (390g) cake flour
* 2 tsp baking powder
* ¼ tsp baking soda
* 1 tsp kosher salt
* 1 cup (198g) neutral oil (like avocado oil)
* 1 cup (198g) sugar
* ½ cup (156g) sweetened condensed milk
* 3 eggs (room temp)
* 1 tbsp vanilla (paste or extract)
* 1¼ cups (284g) buttermilk (room temp)
Whipped Cream + Assembly:
* 1 lb strawberries
* 1 cup (227g) heavy whipping cream (cold)
* ½ cup (156g) sweetened condensed milk
* ½ tsp kosher salt
Directions:
* Preheat oven to 350°F. Grease two 8-inch cake pans.
* Whisk flour, baking powder, baking soda, and salt. Set aside.
* Beat oil + sugar until light (2–3 min). Mix in condensed milk (will look slightly curdled).
* Add eggs + vanilla, mix until smooth.
* Add dry ingredients in 2 parts, mixing on low. Pour in buttermilk and mix until just combined.
* Divide into pans. Bake 35–38 min, until a toothpick comes out with a few moist crumbs. Cool completely.
* Dice half the strawberries; slice the rest.
* Whip cream + condensed milk + salt until fluffy with medium peaks.
* Assemble: layer cake + diced strawberries + whipped cream. Add top layer, more cream, then sliced strawberries.
* Chill until ready to serve.
