Puglia is one of my absolute favourite regions of Italy to visit as the weather gets warmer, so it is the perfect place to spotlight for our May regional menu. Puglia is a major agricultural region known for simple, fresh dishes, producing 40-60% of Italy's olive oil and featuring iconic foods like orecchiette pasta, burrata cheese - both featured on this month's delicious menu.

Last week I received the honour of being awarded - Ordine della Stella d’Italia - Order of the star of Italy. This is one of my favourite pasta recipes. All you need is good Italian sausages, tomato passata, a spoonful of mascarpone and some fresh tagliatelle.
Remove the skins from the sausages and roughly chop the meat. Heat a little olive oil in a pan and fry the sausage until nicely coloured. Add the passata and let it cook down for a few minutes. Stir through a spoonful of mascarpone. This is not essential, but it gives the sauce a lovely richness. Cook the tagliatelle, then add it to the sauce with a splash of pasta water. Toss everything together until silky and well combined 🍝

Another 5-minute pasta, this time with anchovy, chilli and broccoli. It’s one of those combinations that sounds simple (because it is), but the anchovy melts down into the oil and gives you this deep, savoury flavour without being overpowering. A little chilli, some garlic and you’ve got something really satisfying in no time.
Here’s how I did it:
- Slice garlic, chilli and tenderstem broccoli
- Add the broccoli to boiling water
- In a pan, heat olive oil and add chilli, garlic and anchovy fillets
- Take off the heat and let the anchovies melt into the oil
- Add some cream
- After 2 minutes, add your tagliatelle to the broccoli water
- Once cooked, combine the pasta and broccoli with the sauce
That’s it - simple and quick, but as always, delicious.
