Chef Dora has been cooking professionally for 10 years but her journey started long before that in the kitchen with her nonna and extended Italian family. She has drawn inspiration globally travelling to Denmark and the Netherlands to train amongst Michelin star chefs (such as those at Kadeau) and has also worked her way across the hatted restaurants of Naarm.
Her dishes manage to stay playful in nature with subtle nods at her heritage.
Grateful to have Dora as the Executive Chef and creative mind behind our menu; a special addition to the Grace Darling family.

As the seasons shift and the nights pull colder, the basement reawakens for transmissions that hum, fracture and flicker through the bluestone walls.
𝑺𝑴𝑶𝑲𝑬 & 𝑺𝑰𝑮𝑵𝑨𝑳 is a new fortnightly basement series exploring leftfield experiments in sound, dubbed-out textures and fractured electronics, with each volume tracing a different frequency, mood and sonic world beneath The Grace Darling.
Vol. I gathers four projects operating at the point where genre begins to dissolve, moving through avant-pop fragments, metallic synthesis, found sound collage and live performance sitting somewhere between dancefloor transmission and shadowed spectacle.
