375g strong white
50g whole meal rye #
3 eggs
10g salt
10g honey
100g finely chopped bone marrow fat
Mix the dough and one the gluten has developed. Work in the marrow fat
After fermentation, shape into 50g balls and encapsulate some 21 hour @djbbq smoked pulled pork
