We ALL have those days. When cooking sounds like an impossible mental and physical hurdle to jump over.
One of the key things that helps me is to have an arsenal of delicious shortcuts that 1) spark an idea for a balanced meal and 2) help it come together with minimal effort. Enter:
@tastybite . They have a variety of packets of pre-cooked rice, legume-based curries and what I am particularly loving right now are the simmer sauces.
I’m stocked up on the Tikka Masala and Butter Chicken sauces and they really help tie the simplest of ingredients together in a flavorful way.
Provided that you have some protein on deck, this meal requires about 4 minutes of prep and 20 minutes in the oven. And folks it doesn’t get much better than that!
Here’s how to make it!
· 1 packet Tasty Bite basmati rice
· 2-3 cups leftover protein (pre-cooked chicken breast, rotisserie chicken, cubed tofu, a can of chickpeas, leftover ground beef, etc)
· 2 cups frozen peas
· 3-4ish cups fresh spinach, chopped if you want
· 1 jar Tasty Bite butter chicken simmer sauce
· 1/3-ish cup water to rinse out the jar
· 4oz mozzarella cheese, grated (about 1 heaping cup)
Topping: green onions, cilantro, chili crunch, lime wedges, naan
Preheat oven to 350°F. Combine rice, protein, peas, spinach and simmer sauce in a casserole dish. Add water to the jar to get every last drop and then pour that into the dish, tossing everything together until well combined. Top with mozzarella cheese and bake for 20 minutes. Serve hot with fresh herbs, a drizzle of chili crunch, squeeze of lime and warm naan!
