WOC was once again the best event of the year, even if my heart rate still hasn’t quite returned to normal from all that caffeine.
It is always a massive networking whirlwind for me. Meeting new producers and catching up with partners I have worked with for years is always the highlight.
The best part was finally getting behind the bar to brew at the @moiicoffee and @frinjcoffee booths for the first time. It was an amazing experience connecting with so many of you through the coffees I was pouring. Truly, nothing beats the energy of seeing old friends and finally meeting our global community face to face.
I’ve talked about extraction and tasting notes so much over the last few days that I might have forgotten how to have a normal conversation. 😅 Huge thanks to everyone who stopped by to share a sip and a laugh!

Release 47 | Colombia Marlon Bolaños - Honey Pink Bourbon
Marlon Bolaños is a producer who approaches coffee with the precision of a scientist and the palate of a barista.
His Honey Pink Bourbon is all about the details. Marlon focuses on harvesting only the most sugar-dense cherries which are then fermented in a controlled environment before drying with the mucilage intact. This honey process, combined with the unique mineral rich spring water on his farm, creates a cup that is incredibly elegant and sweet.

46: First up, part of our Rare Series, is Inmaculada Fellows Farms Pink Bourbon. For this lot, Inmaculada works with partner farms in the Huila region to source cherries at their peak ripeness. These cherries then undergo Inmaculada’s signature natural fermentation process at their world renowned facility. This result is incredibly juicy with standout notes of peach syrup and grapefruit.
45: Next, in our Traditional Series, from El Vergel Estate, we have a Red and Yellow Caturra. This coffee showcases the Bayter brothers mastery of natural anaerobic processing, where only the most sugar dense cherries are selected to create a deep and complex profile. It is a beautifully structured cup featuring notes of navel orange, black plum, and honey.

The cup though — creamy jasmine that just floats, sweet and aromatic with a citrus acidity that knows exactly where the line is. Bright without biting. This is a gorgeous washed Gesha doing what washed Gesha does best.

44 - Rare Series: Colombia Finca Faith - Double Anaerobic Honey Gesha
Marking our second year of partnership with Aliyah Shah @fincafaith , this release showcases her team’s relentless drive to increase quality through experimental processing. This world class Gesha underwent a technical 116 hour double anaerobic honey process followed by controlled dehumidification drying. It is an elegant, high definition cup featuring the crisp sweetness of pear and vibrant pomegranate. A bright, aromatic lemongrass finish rounds out this sophisticated Colombian gem.
43 - Traditional Series: Ethiopia Buku Abel - Anaerobic Natural
Sourced from the staggering 2,350m heights of Hambella, this lot is a masterclass in high altitude terroir. Producer @wondafrash_edema uses a precise 72-hour anaerobic fermentation to "marinate" the beans in their own juices. The result is an incredibly jammy cup overflowing with notes of raspberry and a refined bergamot acidity.

Grown at Finca El Mirador by Yessica & Diego Parra, this Natural Gesha is a refined expression of a world class variety. It delivers elegant notes of honeysuckle and cranberry alongside a sophisticated muscat grape acidity. A clean simple syrup sweetness and silky mouthfeel round out this high clarity cup.
Colombia Finca Villa Betulia Honey Caturron:
This honey processed lot comes from Luis Anibal & Yeison Calderon at Finca Villa Batulia in Acevedo, Huila. It features the rare Caturron variety, a unique botanical mutation discovered right on this farm. Expect a vibrant cup with clear notes of black cherry and apricot balanced by a distinct cardamom spice. I was shocked when sampling this.

Starting today, we are shifting to a monthly launch schedule to ensure we can focus entirely on the quality and story of every coffee we roast.
This past October, we had the privilege to once again take part in the Cafe Granja La Esperanza (CGLE) annual auction of their best lots, and we were fortunate to win two exquisite lots.
Tusa Hill | Colombia Natural (Auction Lot): Scoring a massive 93.75, this lot features CGLE’s proprietary varietal and represents our second year presenting their world-class work. It is a vibrant, "alive" cup with complex notes of lemongrass, mandarin, cherry, and red grape.
Guadalupe Hill | Colombia Sidra Washed (Auction Lot): Our second auction win is a pristine washed Sidra that earned a 91.25 for its sparkling clarity and incredible balance. Expect a lush, tropical profile of yellow peach and mango, grounded by a unique hint of coriander and a heavy, syrupy body.
Mil Cumbres | Panama Gesha Washed: This comes from first-generation producer Mario Fonseca. Grown at an extreme 2,000 meters, this coffee is a masterclass in elegance with delicate notes of jasmine, peach, and honey. We're calling this a true, classic washed Gesha.
