Caramelized Onion & Miso Ramen ft. our chicken broth!

Serves: 1-2
Ingredients:
2 tbsp butter
1 tablespoon sesame oil
4 onions, thinly sliced
2 cups + 2 tbsp Springbone classic chicken broth
1 tbsp white miso paste
2 packs ramen (seasoning packets discarded or saved for later)
1 egg yolk
Black & white sesame seeds
Squeeze of lime
Directions:
In a large sauté pan, over medium heat add butter and oil. Add the sliced onions and cook low and slow, stirring occasionally, until deeply caramelized and golden.
Deglaze the pan with 2 tablespoons of chicken broth, scraping up all the bits from the bottom. Stir in the miso paste and let it gently simmer.
Meanwhile, cook the ramen according to package directions. Add the broth to the onions. Drain and add the noodles straight into the caramelized onion broth mixture.
Turn off the heat and stir in the egg yolk until silky and glossy.
Serve immediately and top with sesame seeds and a squeeze of fresh lime juice.
