Need a simple, but snazzy dish for your holiday weekend? Try our Tapenade Roast Chicken recipe.
BTW, this is more a recipe guide than a strict recipe.
Ingredients
1 Chicken
Spread-mmms Tapenade
Assorted Root Veggies
Arugula
oil
salt
Directions
1. Roughly chop assorted root vegetables & place in a lightly oiled pan/dish (deep sided, please). If you are using tiny potatoes, it is ok to keep those whole.
2. Pat chicken dry & slide tapenade under the skin of the bird (especially the breast & thighs, wings are a little tricky, so just get some in at the top). Use as much as you want (also depends on the size of your bird). Thin & thick layers of tapenade both work.
Note: Try butterflying your chicken. It helps, but is not necessary for this recipe.
3. Lightly oil the skin. Sprinkle with salt.
4. Place chicken on top of root veggies & slide in the oven.
5. Roast any way you like (see end of post for a suggestion), giving the root veggies a quick toss halfway through the cooking time to distribute pan juices.
6. Remove from oven & let rest for about 10 minutes.
7. Carve chicken & serve on a bed of arugula next to a nice helping of those rambunctious roasted root veggies. Spoon pan juices over everything & enjoy!
Chicken Roasting Tip:
One of my favorite ways to roast a chicken is using the "Lazy Roast Chicken (the Cold-Start Way)" by @dgritzer for @seriouseats , but this recipe should work with any oven roasting technique.
