Orange cake, harrisa caramel, labneh + mascarpone cream + pistachio @spicedept
Working with Spice Dept made me think about building flavour the way I would in a savoury dish layering, toasting, letting each spice speak. I created my own harissa-inspired blend using their range: kanthari chilli for its bright, almost floral heat, backed by red chilli powder and black peppercorns for depth, with cumin and coriander seeds bringing warmth and citrusy lift.
From there it leans more aromatic fennel, green cardamom, ginger, cinnamon, nutmeg and cloves with a little turmeric for earthiness and colour. A touch of rose water softens everything and pulls it somewhere unexpected.
That blend melts into a caramel thatās not just sweet itās spiced, savoury-leaning, and layered. Warmth, fragrance, a gentle heat that lingers.
Paired with a soft orange cake, a labneh + mascarpone cream for tang and lightness, and caramelised pistachios for crunch itās all about contrast. Citrus against spice, cream against heat, savoury notes folded into something unmistakably dessert.
Proof that sweetness doesnāt have to stay in its lane.
