YES IN MY BACK YARD PARTY 8 months ago, Fermentoren was forced to temporarily close following a series of legal and administrative challenges involving parts of the surrounding neighborhood and building community. During this period, we worked extensively to meet every requested requirement and ensure the venue could continue operating in the best possible way for everyone involved. This included major soundproofing improvements, technical upgrades, adjustments related to accessibility, ventilation work, and a long series of inspections and approvals. As many of you know, these kinds of processes can take a long time and often involve complex bureaucracy, which unfortunately kept us away from our home for much longer than we had hoped. Throughout the entire process, we have always remained available, collaborative, and committed to finding constructive solutions together with all parties involved. Our hope moving forward is to continue building a positive and respectful relationship with both the neighborhood and the building community around us. Since 2011, Fermentoren has been more than just a bar. It has been a meeting point, a workplace, and a shared social space for Vesterbro โ€” a place built around people, conversation, craft, music, and community. Now, we are finally back doing what we love most: bringing people together. To celebrate this new beginning, on Sunday, May 17th from 12.00, we invite you to join the Y.I.M.B.Y. Party โ€” a day dedicated to the incredible community that supported us throughout these difficult months and reminded us why places like Fermentoren matter. Expect brewers from across Copenhagen pouring beer directly for you, kombucha, spirits, and coffee from three amazing local spots โ€” @folkkombucha , @hafn_spirits_lab , and @orsacoffee โ€” hot dogs by @johns_hotdogdeli , cider from @gemmemost , baked goods by @bagerietbrod , and special limited-edition bottles by @kihoskh_distribution . Next Wednesday we invite @peoplelikeusdk into our Taproom and Biergarten to celebrate our collaboration and party with us. People Like Us are bringing the decks and the @peoplelikeus_beer_bar resident DJ Jokum will be spinning some vinyl for the evening. People Like Us are also bringing their Hazy IPA 'Out of Office' (refers to the 70-80% neurodivergent people who are currently out of job) and 'Hold Fast' which is a German/Czech pilsner, which will be pouring on draft. Slowburn will bring a Screen Print Pop-up hosted by our Jesper AKA @haandtryk.print . This means you can bring along your own t-shirt/jumper/hoodie/vest/pants to get the Workhorse Bitter design printed onto your threads. Bring a lighter coloured garment as the print will be black/dark, or get goth and go black on black. Slowburn's Dave AKA @aeonother will also bring some vinyl and play some esoteric nonsense and party bangers. Don't forget the Workhorse Bitter! We will be celebrating our delicious collab, with it pouring all night at 50kr and takeway 4-packs. Come on! Come over!

From ageing, to tasting, to blending, to bottling and kegging... The 2026 blend of Seedling will be with you soon, as we have bottled and kegged it this past Wednesday! The process is wild and so is the beer. We let our base wort ferment for over a year with the wild yeasts found in our barrels, from previous generations of Seedling. Periodically, we come and check on the barrels progress by pulling a nail out to taste the liquid gold, as we give it the necessary time to develop into the complex drink we love. One of the things that we find most interesting about this project is the journey the beer takes throughout these early stages up until when we then feel it is ready to start considering of what we would like the blend to be. Then comes a crucial part of the process, where we taste and test all of the barrels to single out the best ones, to then blend them all into one vessel. From there we package the beer in to bottles and kegs for a secondary fermentation. The next, and arguably most important, step is you drinking it... ...we just canโ€™t wait to share this new Seedling with you.

This is Kim's second exhibition here, the first being September 2023. We are so privileged to have him back with his stunning new works. All paintings and illustrations are for sale. Kim Heyst is a visual artist and works primarily with ink and watercolour. He cultivates the uncanny, the abstract and the fantastical. ๐ŸŽ๐–๐Ž๐‘๐Š๐‡๐Ž๐‘๐’๐„ ๐๐ˆ๐“๐“๐„๐‘๐ŸŽ Best Bitter - 4% Collaboration with @peoplelikeusdk When we began discussing a collaboration with People Like Us, we talked about how both of our breweries had a strong focus on the workers. We also talked about our head brewers' passion for English beer, in particular Best Bitter. We have both longed for an excuse to brew this style and this collaboration felt like the perfect opportunity. Historically the Bitter was drank by workers during the industrial revolution in the UK, anecdotally it was said it was designed it to "get the coal dust out of miners' throats". Workhorse Bitter is our homage to the tried and true Best Bitter. We did our best to brew a beer that is โ€˜by the workers, for the workersโ€™. Brewed with a robust malt blend, including Marris Otter, that provides notes of delicate toffee and biscuity deliciousness that is balanced by a dose of Fuggle and East Kent Goldings hops. The hops add a spicy and herbal bitter balance to the prominent malt characteristics of this brew. You can find Workhorse Bitter on tap and in can at @slowburntaproom right now, it is tasting sublime in our sunny biergarten. Shout-out to the folks at Slowburn Brewing Co-op for showing us a good time at our tour + tasting event at their brewery this past weekend. ๐Ÿ™Œ What a great spot! The Slowburn brewery and taproom, located in a former prison building, is located in Albertslund, only a few stops from the Copenhagen Central Station by S-tog. If it's a sunny day, having beers outside with the high prison walls is super cozy, and they have an indoor taproom if it's not ideal outside. Jesper from Slowburn put on an excellent tour and tasting, and you can easily book these sessions on their website. The performance space in our brewery is an intimate environment, with the audience sitting very close to the performing musicians, betwixt the fermenting vessels. In this space the symbiosis of performer and listener is powerfully apparent. The six concerts feature world-class classical musicians operating in the borderlands between baroque and folk music, romanticism and pop, and classical and free jazz. This year we decided to change Forรฅrsbajer up and only use New Zealand hops. Bring in the New (Zealand)! We double dry-hopped this Pale Ale with Riwaka and Motueka. These delicious and unusual hops give you aromas of sweet Passionfruit, Lemon Zest and subtle Basil. Once you take your first sip those notes move onto to a light body and a subtle bitter grassy earthy finish. ๐Ÿฆด๐…๐„๐‘๐Œ๐„๐๐“๐„๐ƒ ๐‡๐”๐Œ๐€๐ ๐‘๐„๐Œ๐€๐ˆ๐๐’๐Ÿ’€ Bone Char Smoked Lager - 5,2% This week we are excited to release a new beer featuring a new process for us. At Slowburn we are always working towards being more sustainable, whether that is in the methods we implement or the materials we use to create great beer. We are also always working towards cleaner and crisper lagers... And so we proudly present Fermented Human Remains! This lager is unusual in that it uses bone char. Bone char is a porous, black, granular material produced by charring bones. Bone char is used here instead of RO (reverse osmosis) to filter the water and remove unwanted elements. It is also used as finings, to improve clarity and adjust flavour and aroma. In short, the bone char gives you a crystal clear and crisp beer! We are aware that many of our customers are vegetarian and vegan, so rather than using animal bones we have used human bones. We want to avoid using animal byproducts in our beers and believe that using human byproducts is much more sustainable. Furthermore we have sourced these bones locally to ensure that the carbon footprint is smaller. The bonus side effects of using this human bone char is a subtle smokey flavour AND the health benefits from the activated charcoal contained. In the nose you get subtle notes of smokey bacon and grainy crackers, in the mouth you get a full body that drys out with a gentle bitterness from the Hallertau Mittelfrรผh hops. We have brewed this lager a little stronger than usual, to give it that pรฅske punch for your Easter lunch. Fermented Human Remains pairs perfectly with tarteletter or slow roasted lamb. ๐ŸŒฒ ๐Š๐ˆ๐๐† ๐’๐„๐๐”๐Ž๐ˆ๐€ ๐ŸŒฒ West Coast Double IPA - 8,0% King Sequoia is our tribute to the legendary Double IPAs of the Pacific West Coast. Its bold, drinkable and balanced; leading ultimately to a pleasantly dry and dank experience. At the beginning, you're hit with an alluring aroma of apricot, lemon and resinous pine. The bigger body of this beer is paired with a malt complexity that rounds out its depth, making it a dangerously drinkable Double IPA. We generously dry-hopped King Sequoia with Simcoe, Centennial, and Columbus. Giving you notes of citrus and stone fruit, similar to the aroma, followed by the earthy dankness you love and expect from a great West Coast IPA. ๐Ÿงธ๐“๐‡๐„ ๐†๐Ž๐‹๐ƒ๐„๐ ๐๐„๐€๐‘๐Ÿงธ West Coast IPA - 6% Collaboration with @whitelabscopenhagen We have a new beer for your delectation! This a very California inspired brew. Our brewer Sean, from San Francisco, wanted to brew a beer that evoked the flavours of his home state. White Labs originates from San Diego and produces the magnificent yeasts that allow us to conjure this specific essence. It was a match made on the West Coast and transported to Albertslund. We were so happy to have Emil, Martin & George from White Labs come and brew with us a few weeks back. They specifically brought with them the WLP090 San Diego Super Ale Yeast because when they recently visited San Diego they tasted a variety of IPAs from around the city and found that they liked the beers that used this yeast best. Best in the West? We had to find out! Hop-wise we went traditional, with Centennial and Chinook on the hot side then dry-hopped it with Amarillo, Simcoe and Columbus on the cold side. We found that the WLP090 was clean but brought an extra fruity punch. The combination of the hop profile and the yeast gave us something classic and delicious. The nose of The Golden Bear starts out all dank goodness and sweet starburst but once it hits your pallet it flips to wonderful earthy, lemon grass characters. This medium body, balanced IPA gives all the desired dankness you want from a West Coast but doesn't leave your pallet fried, allowing you to keep coming back for more. Oh and the bear on the beautiful label, painted by @runebodker , and in the name? Well the grizzly bear is featured on the California state flag and is also known as the California Golden Bear.
