New Addition… Champagne Alexandre Grimée is from the west of Vallée de la Marne. Located in Azy-sur-Marne, he cultivates 1 Hectare of Meunier in Bonneil that was planted by his grandad! The view from this south facing amphitheatre is simply stunning! Everything is crafted by hand and by himself. Alexandre is looking after his vineyard like a garden and from the 2023 vintage it will be certified Organic. In the cellar, the same principles apply. Authenticity, Terroir Identity and Transparency. Thanks @champagnealexandregrimee for your trust. Your wines will be enjoyed by some lucky customers… Only 60 bottles of Champagne Brut Nature Bonneil “Sous Les Trous” 2022 for Ireland!

Little needs to be said about Chartreuse and the Carthusian monks responsible for making it. Originally crafted as an elixir to live a long life, this liqueur has become internationally recognised as one of the greatest and most complex in the world. The exact recipe is a well kept secret by the Chartreuse Order, though we know is is made with 130 plants, flowers and herbs. These ingredients are macerated in a carefully considered selection of alcohols, then subsequently distilled and aged in large oak barrels in the monks’ cellar. In 2019, the Carthusian monks made the decision to greatly limit productionof their famous liqueurs to focus their energies on prayer and minimise their impact on the environment. That combined with the explosion in popularity of Chartreuse in the world of mixology turned the liqueur into a highly sought after rarity. We are lucky enough to have received two different bottlings, both rare among Chartreuse liqueurs. . “Liqueur du 9e Centenaire” Mise 2024. First created in 1984 to honour the 900th anniversary of the order’s founding by Saint Bruno in 1084 C.E. Exceptionally rare, the exact blend is not widely known, but is considered the most complex of their offerings. 47% ABV. . “Cuvée des Meilleurs Ouvriers de France Sommeliers” Mise 2024. Made in collaboration with the Best Craftsmen of France Sommelier competition, using Chartreuse Jaune as its base liqueur and aiming to highlight vibrant energy and freshness. 45% ABV.

Welcome to Ireland @eric_rodez !! I’ve been waiting patiently 🥂🍾 Based in the renowned Grand Cru village of Ambonnay in the Montagne de Reims, Eric Rodez is a leading producer of fine Champagnes. With a Champagne-making history stretching back many generations, the domaine is now run by Eric, his wife Martine and his son, Mickaël (the ninth generation of the winemaking family). Eric Rodez owns 7ha of Pinot Noir and Chardonnay vines along the south and southeast-facing slopes of Ambonnay. The vineyards are farmed biodynamically while, in the cellar, about 70% of Rodez Champagne is fermented and aged in oak. The character of Rodez Champagnes is heavily defined by the judicious blending of reserve wines with the new-vintage wine, with Eric using up to 10 different vintages in his final cuvées – his experience in the cellar at Champagne Krug surely a factor there. Whatever the particular cuvée, Rodez Champagnes are consistently elegant, vinous yet deliciously complex.

Tenuta San Guido is located on the Tyrrhenian coast, in Maremma, and it stretches for 13km from the sea to the hills. The 70 hectares of vines are planted up to 350 meters on the hills, having been given its own appellation Bolgheri Sassicaia, the first and only one in Italy. Sassicaia their first wine is one of the original Super Tuscans is one of the most sought after wines in the world and understandably it’s pricey and limited. Lucky for us we secured some of their 2nd wine, Toscana IGT “Guildaberto” 2022. Guidalberto is born as a tribute to the ancestor Guidalberto della Gherardesca, a pioneer of agriculture in the Bolgheri area who, in the early decades of the 1800s, built the first factories and churches and designed the Cypress Avenue. Delicious, deep, dark ruby-red colour with complex Italian aromas of forest floor, herbs, anise and red cherry. Very limited €65

Really delighted to offer the wines from Caroline & Benjamin Guilbert to the Best Restaurants and Wine Bars of Ireland. Domaine Guilbert Gillet is a new estate, created in 2020 and based in Savigny-les-Beaune. This small family estate (less than 4 Hectares) has commited on highlighting the diversity of terroirs in Savigny-les-Beaune through meticulous, and very precise work in the vineyard. In the cellar, the work is done by gravity and with minimal interventions. As a result, the wines are exceptional, authentic, and undoubtedly amongst the best that you can find in Burgundy. @domaineguilbertgillet

Visiting Château-Grillet helped us understanding the amount of work behind each bottle (7000 in total in a good year). This 3,5 hectares monopoly has been organised in more than 100 plots (terraces) with stone walls to retain the granitic and sandy soil (only 10% clay). This Viognier-focused estate (with worldwide recognition) produces some of the finest white wines of the region. #ChâteauGrillet #Viognier #Condrieu #LaCarthery #NorthernRhône #BiodynamicWine #FineWine

Incredible visit today at the Egon MĂĽller Winery in Wiltingen, Germany. We had the chance to discover their two different vineyards. - Braune Kupp (second picture) is really steep and just above the Saar River. You can feel the mild air flow coming from the river below. - the legendary Grosse Lage Scharzhodberger (made of Red and Grey Slate) needs no introduction and is located right behind the house. Part of it is still planted with some ungrafted pre-phylloxera vines (high density plantation on single post - picture 3). When I first met Stéphane Bernaudeau in 2019 in Anjou, we talked about frost, climate change, vines and viticulture (Chenin Blanc obviously), work in the cellar (low intervention of course) and wines (mostly whites). We tasted some of Stéphanes’ cuvées and blind tasted others. Nearly 4 years later we are really proud to have received the first allocation of « Les Onglés » for the Republic of Ireland. Soon it will be available in Restaurants and a few Wine Shops.
