@tastingaustralia Part 2! From hiking through Cleland National Park to outrageously fun carpark kitchen shenanigans at Hot Pot Express - Adelaide just keeps on giving! We have snacked on almost every plate at Town Square (how many porchetta pops is too many?) and consumed our body weight in stunning local wine, gin and beer - with hangovers to prove it today! So much fun with new friends and old!! Until next time Radelaide!! 💚💚

Shame on me for not sharing some of this sooner, but honestly @tastingaustralia has had me too immersed in epic food adventures to think twice about the gram! A snap shot of the last few days * Our main course for yesterday’s Mother’s Day feast - @yolkydokey spent hen & vine leaf pithivier, local chestnuts, preserved quince, with cider mash jus poured at the table * Possibly the best porchetta of my life from @please_send_noods.adl + equally delicious blooming onion * Emu bagel @esmay_adl , congrats @alannasapwell on such a beautiful new home * Sam having his way with a small banana icecream * Tommy Ruff escabeche @thelmapiccadilly * Sardine & anchovy on toast at Thelma. The most genuine and soulful food I’ve eaten in a very long time, Thank you @tomm__campbell and team xx * Tallow brioche, Vegemite, cold smoked roo and saltbush for our snack today * Our fig leaf ricotta with a tabbouleh of preserved green figs & fresh local ones from the Adelaide Hills * Butternut and guanciale hasselback with pumpkin skin miso dressing and pumpkin sourdough pangrattato A huge thank you to all of the festival organisers for having us and putting on such a world-class event! Now to hit the kitchen for our second event tonight!

Super proud of our team after a HUGE week of meat processing leading up to Summer! đŸźđŸ„©đŸ“ 2 x @barragunda Black Angus steers 100 x @yolkydokey spent hens 150kg of mince packed and sold to our amazing local community via the Collective online store 500 litres of stock turned into 30 litres of secondary sauces 10+ litres of rendered tallow and shmaltz 4 girellos cured and ready for our next batch of bresoala Post-stock bones carbonised and ready to be put back through our compost system Thank you legends! @brendanlye @dylan_rayner96 @chef_badgal.lelee @lollypopskvor @samuelahumphreys @adz_col

Sometimes in life, great things happen for reasons you can’t quite explain. It was an honour to share moments with @chefandreacarlson her recent visit to Australia. She has a true sensibility for everything that happens around the dining table, an incredible palate, and knowledge beyond comprehension, yet remains humble enough to ask the right questions. On that note, we visited @barragunda and met @simonewatts_chef an absolute legend, deeply knowledgeable, extremely generous, and with a connection to the land that’s impossible to miss. Truly inspiring. And this story wouldn’t be complete without mentioning my new friend @lucyhyslop , a beautiful human and an incredible journalist who joined Andrea on this journey. Coming up for air after the weekend that was!! What a ride to celebrate all of our team’s hard work, creativity and drive to shake shit up!! There were many martini’s, tears, nerves, shoes far less comfortable than Blundstones and gowns more glamorous than our usual flannel attire
but most importantly a whole lotta love with our little coastal community! Much love to @embla_melbourne for housing us all until the wee hours of the morning, @soi38 for the hangover cure and @marmelorestaurant for making us feel human again the following day!

I had to sleep on this to be sure it was still real today! 😳 Everything that has happened since we opened the doors to Barragunda has seemed like a dream - but this is certainly the cherry on top!! A huge thank you to @breheny @besharodell @danivalent and everyone else who has visited and helped to shine light on our little project. Can’t wait to celebrate with everyone on Monday! 💚

Dishes like this excite me as they breathe signs of warmer weather. The soil is heating up so the coriander is blooming whilst the stone fruit starts to form
