Continuing to introduce the renowned Shanghai chefs who joined the jury of the first transparent restaurant ranking, ByChefs. Today, we share the favourite places of Du Jianqing. A celebrated chef and restaurateur, Du Jianqing is known for his modern interpretation of authentic Teochew cuisine. With more than 30 years of culinary experience — 28 of them spent in Shanghai — he brings a rare depth of mastery to his craft. In 2015, he founded JingXiHui in Shanghai, a brand built on meticulous ingredient sourcing and refined technique. He is particularly recognised for his seafood, aged broths and mastery of dried seafood preparations — pillars of classical Teochew gastronomy, handled with precision and restraint. Over the following years, he continued to expand his vision. In 2024, he launched Selection By Du, a personalised dining concept that distils decades of expertise into a more intimate format. In 2025, he introduced GuiXi, a lighter and more contemporary expression of Teochew cuisine designed to resonate with a younger audience. Under his leadership, JingXiHui has held Black Pearl Three Diamond and Michelin One Star distinctions for eight consecutive years — a rare consistency that reflects both discipline and enduring relevance. @selection_by_du @accjingxihui

Chef-owner Mr. Du Jianqing, a native of Puning in Chaoshan, brings a deeply personal vision to the table. His philosophy is grounded in uncompromising quality — from meticulous ingredient sourcing to the choice of tableware and presentation. Geoduck with Putian Bamboo Shoots (莆田筍尖大勾螺) leans clean and briny. Marinated Qingdao Prawns (椒鹽青島大蝦) are lightly seasoned, retaining a natural sweetness.
