There’s a recipe for pumpkin in Kaveri Ponnapa’s Coorg:The Cookbook that I eat almost every day. Kind of. I think I do the Taiwanese version. You know. My way. You can use pumpkin, butternut, acorn, kabocha, taro, or even sweet potato. I typically use a squash called calabaza. It even works with those pumpkins that get grown solely for carving then trashing. Anyway, growing up we sometimes had those pumpkins that we would decorate but never cut up until we were going to eat them. Those typically made good pickles, but never as good as the sweet ones. But in the recipe in Coorg: The Cookbook Kaveri does the whole tempering thing that reminds me of how we always made pickles and meals. There was never any spluttering or hot flying spices, but the use of really hot oil poured over crushed or ground spices was very common. Not garlic or hot peppers, though. So I use my tempering machine and put in garlic, black pepper, and mustard seeds and in this case curry leaves and other spices like asafoetida and jaggery sugar - you don’t have to use them if you don’t want to, or don’t have them, use a pinch of celery seeds and a tsp of any sugar instead - then ground it up into a finely strained incredibly fragrant and tasty oil. After massaging the squash with other spices and steaming it, I just toss some seasoned oil into the mix and served it as a side dish. Remember, this is the non-spicy version that uses sumac instead of chili pepper and a souring agent. Vegan incidentally. If you do use fermented squash for this, it’s more of an aloo ko achar but with squash. At Substack later today with a whole mess of new posts with recipes. And in lieu of running out and buying Ken Albala’s newest book, I searched through the other 20 or so I have of his and found the most amazing recipe created by an Indian ruler of yore whose #jainreligion pretty much led him to develop a people’s cuisine using accessible, local, practically only vegetarian ingredients. Friendship is Such a convincing front where ppl leave you alone thinking I know what that is, those two ppl hang out, when actually it’s one of the most magical forces where you spiritually and existentially have another persons back and also hold the lamp for them and light their path when they cannot see but also hold their hand in the dark but also stand by them while they walk in circles and also eat ice cream and laugh and also hold their past but allow them basically any future they want!!! lol friends 5vr, manifesting hanging out w no agenda!! work is whatever!!! friends are forever!!!! you gotta feel like Someone has your back if you’re gunna put anything on the line like if you’re gunna fight against everything sucking so hard!

first time around, performing this show was singularly terrifying and the second time was the pinnacle of fun, cannot have highs without lows or something! me quale idea! thanks to all who came out and all who have taken a moment to put pen to paper about the show. basically my heart, arms, and bruised legs are forever extended toward the truest freak who I am lucky to call mine own @lfdanceproblems , and with her hand in mine we humbly take a knee for our legendary team, and prostrate ourselves before the one and only Host extraordinaire @mariannerendon .
