I haven’t posted any music in quite a while. Generally speaking, I miss playing music a whole lot. Sometimes, when there isn’t a purpose to making something, it can be hardd to find the motivation to do anything. This is especially true when you have lots of other crap going on like paying rent and surviving and all that boring stuff.
But, recently I ended up showing 2 friends some of my old music, some songs I had made from scratch and some covers. And they were mega supportive and encouraged me to do something with it. So I dug up this cover of “Through the Echoes - Paolo Nutini” which I filmed maybe 9-10 months ago, and decided to finish it.
When things are stressful, or life crap gets in the way of doing things which make you happy, it’s always nice to just hear some small words of encouragement. Can make all the difference. Song has some mistakes, but warts and all is better than no warts and nothing else either.
In today's episode of "stuff I did this one time", when working on a project which involved a goose, I decided to insert this bow-tie wearing goose into various cinematic pop-culture moments.

Wilkommen friends and foes to another EU friendly episode of Boatanicals, a series of food and drinks pairings with @hendricksgin with food from me, all made aboard my lovely lil canal boat with drinks from some wonderful industry guests!
And this week, our special guest is……. @mattey_g 🏴
Yes, it’s the @threesheetsbars icon Matty G! He’s a lover, he’s a fighter, he’s a bundle of joy wrapped in barbed wire 🥰
This week he’s made a wonderful Flora Adora highball with Cloudberry tea & Raspberry cordial and with this we’re pairing a classic Mixed Berry Pavlova 🍓
So let’s get into it!
Ingredients:
Cordial*
250g raspberries
200g sugar
200g water
2.5ml Cloud Tea
32.5ml Raspberry Cordial
30ml Hendricks Floral Adora
Soda water
4 egg whites
4 tbsp caster sugar
1 tsp white wine vinegar
1 tsp cornflour
200ml double cream
50g icing sugar
1/2 punnet raspberries
1/2 punnet strawberries
1/2 lemon
2 heaped tbsp icing sugar
How’s it done then mate?
1. Whisk up your egg whites whilst gradually adding in the sugar. Once soft peaks form, mix together the cornflour and vinegar and add into the mix and whisk till stiff peaks form
2. Spread thick across baking parchment and cook at 120c for 30-45 mins (no colour but outside hardened) then turn off the oven and leave it slightly ajar for another hour till dried most of the way through. Meringue should be crisp but gooey in the centre
3. Whisk the cream and gradually add the icing sugar in till you have thick Chantilly cream
4. Cut the fruit in half and mix gently in with the lemon juice and icing sugar
5. To plate, layer all up (meringue - cream - fruit) slice and drizzle with pomegranate molasses or balsamic glaze (optional) and add pomegranate seeds for extra crunch
6. For the drink, Cordial: Cook for 1 hour at 60°C
Strain add 0.8% citric acid to overall strained weight.
Cloud tea infusion: 5% cloud tea to vodka, 30 minutes at room temperature, strain. Build in highball glass with plenty of ice and top with soda 👌
