The Kuramoto of Mantensei in sparsely-populated Tottori prefecture loves to forage for mushrooms. Kinoko means mushroom in Japanese, and this Junmai Ginjo is packed with earthy, umami deliciousness.

This bottle of Kirei 89 “Hachiku” tasted like delicious bacon. 🥓
Usually when you see a number on a sake bottle it is the rice polishing ratio of the sake. In the case of Kirei 89, it is the ratio of Koji to regular rice, 89%, more than three times what is usual for sake! The large amount of koji gives the sake its uniquely savory and rich taste. 🤤
Oze Yukidoke Natsugin, a beautiful sake for a hot late-summer evening. Plush ricey-ness, gentle tropical fruit and floral aromatics.
“Yukidoke” means thawing snow or snowmelt. Pair it with a frigid swimming hole in a mountain stream on a hot day.

I had a bottle of Aizu Shikon open in the fridge for about a week while I was away. The sweetness had toned down quite a bit, and a more ricey, junmai-shu expression emerged. Heated up, it took on a lovely custard-like texture. Like liquid panna cotta with a little fruit.
Don’t be afraid to warm up some of your sake to see what it does, even if it isn’t the recommended serving style. Time and temperature have huge effects on sake. The results won’t always be this delicious, but they are worth exploring.

Followed advice from @takasakinookan and added some lemon peel to warm yamahai sake. Delicious. Warming sake enhances and smoothes out sweetness and umami. The lemon adds a sharp brightness. Like a softer hot toddy.
