Last year, we visited Japan. These egg salad sandwiches were a staple for us. Our Japan memories are associated with these, so we decided to make them at home :)
Japanese Egg Sandwich
Ingredients (2–3 sandwiches) • 4 large eggs • 2–3 tbsp Japanese mayo (preferably Kewpie) • 1 tsp sugar • Salt, to taste • Black pepper (optional) • 4–6 slices soft white sandwich bread (milk bread/shokupan if possible - we used brioche bread) • 1–2 tbsp softened butter
Instructions
1. Boil the eggs • Place eggs in a pot and cover with water • Bring to a boil, then cook for 10–11 minutes • Transfer immediately to ice water and let cool completely
2. Prep the filling • Peel the eggs • Mash them in a bowl (slightly chunky texture is best—not completely smooth) • Add: • Japanese mayo • Sugar • Salt + pepper • Mix until creamy and well combined
Taste and adjust. This filling should be slightly sweet, rich, and very creamy
3. Prepare the bread • Lightly butter one side of each slice of bread • (Optional but authentic): Trim crusts for that convenience-store look
4. Assemble • Spread a thick layer of egg filling onto one slice • Top with another slice (butter side in) • Gently press and slice in half
These are great for parties. We brought them to a potluck :)

( Recipe below) Moms are the under appreciated superheroes, always using up stuff before it goes bad 🤣 Truthfully, I haven’t been able to enjoy a lot of solid food during the past week. Pain and inflammation after wisdom tooth removal is no joke! So I made this gorgeous Asparagus summer soup, and saved it for my office lunch too. You can also add homemade chicken broth instead of stock cubes! Recipe 👇🏽
Creamy Asparagus Soup
Ingredients
* 1 bunch asparagus, chopped
* 1 small onion, chopped
* 2 to 3 cloves garlic, chopped
* 2 tablespoons butter + some olive oil
* 2 chicken stock cubes
* 2 to 3 cups water
* 1/4 to 1/2 cup cream
* Salt and pepper to taste
Toppings
* Olive oil
* Fresh lemon juice
* Dried oregano
* Chili flakes
* Roasted asparagus
* Crumbled feta cheese
Instructions
1. Chop the asparagus into small pieces. Set aside a few tips if you want to roast some for topping.
2. In a pot over medium heat, melt the butter and add some olive oil to the pot. Add the chopped onion and garlic and cook until soft and fragrant.
3. Add the asparagus and sauté for a couple of minutes.
4. Add the chicken stock cubes and pour in 2 to 3 cups of water. Bring to a simmer.
5. Cook for about 10 to 12 minutes, until the asparagus is tender.
6. Blend the soup until smooth using a blender.
7. Return the soup to the pot and cook for a few more minutes until slightly thickened.
8. Stir in the cream and adjust salt and pepper to taste.
9. Serve warm, topped with olive oil, a squeeze of lemon juice, oregano, chili flakes, roasted asparagus, and crumbled feta.

Mango Bingsu recipe below, but story time first! Ammad wanted to try Bingsu (Korean dessert) from a famous cafe in Vancouver. We planned for it, but when we got there, it was closed :( Ammad’s heart was broken. Thats when kids decided that they will surprise him by making it at home. Needless to say, I was the one that ended up doing all the work, and we didn’t actually surprise him, and also, this was after one failed attempt of making it, but thats a story for another day. For now, enjoy the recipe:
Mango 🥭 Bingsu (Korean Dessert)
Ingredients
* 2 cups milk (for milk ice) or 2 cups finely crushed ice
* 1–2 ripe mangoes, diced
* 2–3 tbsp sweetened condensed milk (adjust to taste)
* 1 scoop vanilla ice cream
* Optional: mango purée
Recipe
* Mix the milk with condensed milk and freeze in a ziploc bag. Make sure you lay it out flat.
* Crush the frozen milk with a rolling pin. This is your “shaved” ice.
* Add the shaved ice to a serving bowl.
* Add mango chunks on top
* Top with a scoop of vanilla icecream.
* Add mango purée on top for extra flavor.
* Top with a Mango “flower”
* Finish with optional toppings like coconut flakes and a drizzle of condensed milk.
* Serve immediately and enjoy!
