Here is a bit of our journey and ‘who we are’: Ruby Coffee Roasters started in 2013 in the garage of our founder Jared’s family home in rural Central Wisconsin, named in honor of his now 96-year-old grandmother, Ruby (P.S. she is hands down our biggest fan 🙌🏻). After years spent in specialty coffee on the West Coast, Jared returned home to build something intentional and quality-driven—and we’ve been growing ever since. By 2015, we moved into our current roastery in Nelsonville, WI (pop. ~200), a renovated 4,000+ sq ft warehouse where we now roast our coffee each month. Today, we roast and ship to coffee enthusiasts across the country (and beyond!), partner with like-minded cafes, and serve up coffee and fresh, organic food at our two local cafes in Nelsonville and Stevens Point. We source coffees through long-term partnerships with producers and importers who value transparency, sustainability, and community-forward values—always striving to present coffees that are traceable, vibrant, and a vignette into a moment in time. We’re brewing up Peru La Neblina this morning for QC and it’s a stunner. Incredibly juicy stone fruit and melon balanced with creamy chocolate. Definitely a sweet spot, hitting all the right notes 🍑✨

Bolivia Finca Rosita Java 🇧🇴 This microlot from Finca Rosita is something special. Grown in Bolivia and composed entirely of the Java variety, it offers a smooth, mellow profile that really stands out. Known for its resilience and ability to produce exceptional quality at high elevations, Java shines in this lot. The cup is elegant and comforting, with notes of apple pie, cashew butter, nougat, and milk chocolate.🍫🥧

Peru David Flores La Neblina 🇵🇪 This washed Sidra is vibrant and expressive—bright florals, silky sweetness, and clean fruit, with a smooth, comforting finish. Grown by David Flores, General Manager of El Morito (a collective supporting 150+ small producers), this coffee reflects both intention and care at every step. With only 25 sacks in the world (about 150 lbs of unroasted/green coffee), it’s an incredibly rare lot—and a first for our menu. We taste: Melon - Apricot - Rainer Cherry - Chocolate Macaron 🍈

Colombia Aguacate 🇨🇴🥝 Aguacate is significant in the history of Ruby as it was one of the first coffees we roasted back in 2013!
