10/09/23 was the day I married my best friend and love of my life Zac. Ten months on and our love has blossomed even more. I would have loved to have shared this gorgeous video months ago, but sometimes it takes time process such an epic life event! This is one of the enchanting edits we have. A beautiful sunny and floral salad. I love making food beautiful and colourful. Veggies give us an abundance of minerals and vitamins and phytonutrients, they also help to encourage a healthy and diverse micro biome. So make eating them enjoyable. I always go high of the herb front - as fresh herbs pack a huge punch when it comes to micronutrients. Some of these herbs and plants are seasonal and foraged and have an amazing spicy and zesty flavour. I also find biting into a tomato this time of year is like a little orb of sunshine bursting in your mouth! So delicious!!! I popped some capers, in here too and some balanced almonds. Dressed with Lots of gut loving olive oil too. Turkish Eggs ๐Ÿฅš๐Ÿฅš๐Ÿฅš To me ...a perfect Sunday brunch means eggs! A GORGEOUS way to bring some sunshine to this rainy day! ๐ŸŒง๐ŸŒง๐ŸŒง๐Ÿ’ฆ๐Ÿ’ง Full of protein and some fats to keep you feeling nourished and full and avoid an undesirable insulin spike. Probiotic goodness from the yogurt, lots of choline in the eggs for brain boosting nourishment and lots of butter ....because well butter is delicious. Serves two 4 eggs 275g of live Greek yogurt 25g of butter 1 teaspoon Aleppo pepper 2 small or 1 large clove of garlic 1/2 teaspoon of salt A few sprigs of dill Black pepper 1. Heat a large pan of water and place a glass bowl inside once the water is simmering. 2. Place your yogurt in the bowl and add the minced garlic and salt. You only need to leave the bowl in the pan for say 30 seconds or 1 minuet, then remove and place on the counter top, the idea is the yogurt is not cold but closer warm room temperature (maybe Turkish room temp not English!) 3. melt your butter in a pan, allow the butter to melt and really bubble before adding the Aleppo pepper, stir through the pepper it will roar up a little, and allow it to bubble for a few seconds before pouring into a cup or jug, and setting aside until the eggs are done. 4.Now on to the poached eggs, ideally the eggs are as fresh as possible (impossible to poach an older egg as it all falls apart no matter what method you use). So bring a fresh pan of water to simmering point. 5. Once the pan is simmering turn down the heat so bubbles are not rapidly coming up, add vinegar to the water if you wish (I donโ€™t) and very gently break your eggs into the water, the water will be hot but with no movement and bubbles. With a slotted spoon remove the egg from the water and check to see the yolk is firmer on the surface but still squishy and soft in the middle. The white should be cooked/entirely set. This usually takes approx 3-4 minutes. 6. Put your yogurt on a serving dish or two small bowls, place your eggs on top, drizzle with the beautiful red butter, top with dill sprigs and season. Autumn days, and so we enter squash season! ๐Ÿ‚๐Ÿ๐Ÿ‚ If you know me, youโ€™ll know I adore roasted squash salads, filled with all the gorgeous juicy gems like pomegranate seeds, figs and pine nuts. The options are many and the results are delicious! Autumnal Squashโ€™s pack a nutrient dense punch with high levels of beta-carotene, this is found in the orange and red pigments of vegetables. Our bodies convert beta-carotene into vitamin A, a nutrient required for good eye and skin health & very much needed for a strong immune system. The data is strong on this nutrient and itโ€™s protective effect on the body. Studies show that people with high blood levels of carotenoids have significantly reduced risk of macular degeneration. In addition to this beta carotene is a potent antioxidant making it a hugely protective nutrient, it may help reduce the risk of certain disease and some data shows an positive association with cognitive function and reducing the risk of cognitive decline. Squash is also a great, easy to digest carbohydrate source, perfect to pair with protein and veggies for lunch or dinner. Roast with the skin on and scoop flesh out or cut off for precision, even chopping it in half to roast and scooping out the flesh makes it an easy addition to salads and soups. I adore combining roasted butternut, acorn or kabocha squash with pomegranate seeds, fresh herbs and feta, always delicious topped with toasted pine nuts or almonds. But get creative! See what you love- tahini and rocket is also a lovely combination. Olive oil is a must. I love to flavour olive oil with garlic, lemon, smoked paprika and bay and then leave the feta to marinate in this before adding - it can really bring extra magic to a dish! Hello June...hello sunshine! Does anyone else feel like they blossom this time of year? Morning sunshine is essential for me to feel human...and yes isnโ€™t always easy to get in England so I cherish these moments! Research shows that sunshine upon waking regulates our circadian rhythm and therefore regulates the appropriate and optimum secretion of cortisol in the morning. Cortisol (amongst its many fascinating responsibilities) makes us feel alert and wakes us up! It should always be highest in the morning and go down throughout the day being lowest before we sleep. It has an antagonism with melatonin which makes us feel sleepy- but thatโ€™s another story and another post all together- We need to get light right! Without optimum light upon waking cortisol release does not always follow this optimum morning peak with a gentle downward flow and can have a knock on effect on numerous neurological and endocrine functions. Healthy Lunch Box ideas! Quick healthy options that keep you sustained, focused and feeling good. For quick solutions itโ€™s all about cooking in bulk and using leftovers, roast a few trays of veg and use over a few days, always have a protein source like salmon, eggs, tempeh, feta or prawns. Greens are easy with lots of leaves and fresh herbs for a micronutrient hit! Good carb options include quinoa, root veg, squash, wild rice or chickpeas/pluses. Bone broth with greens makes a tasty and easy soup! For a long day or work out day you can bump up antioxidants with a protein rich smoothie - vegan protein powder, berries, unsweetened nut milk & hemp seeds are a great combo. Happy Earth Day ๐ŸŒ A day for environmental awareness and celebration of the earths beauty and treasures. ๐Ÿ’š๐ŸŒฑ๐Ÿ’š๐ŸŒฑ๐Ÿ’š Where do we start with putting donations to good effect rather than offsetting an aching sense of guilt. Well Will MacAskill is a great person to ask, heโ€™s a professor of philosophy at Oxford uni and all round brilliant man. He founded 80,000 hours an organisation that conducts research on which careers have the largest positive social impact and how your career choice could help solve the worlds most pressing problems. He is also one of the originators of the effective altruism movement; a project that uses evidence and reason to work out how to benefit the world as much as possible. One of the valuable things the project does is research which charities are the most effective to give to and tells us why! I love artichokes๐Ÿ’š๐Ÿ’œ๐Ÿ’š The edible part of an artichoke is the bud within the flower head before it fully blooms. I find them so incredibly beautiful! The heart loves to be without its layers and is oh so sweet and tender as long as you tread carefully to avoid being choked - can anyone relate? โ˜บ๏ธ The Nutritious flower is high in fibre; making them gut friendly and prebiotic, as well as being a source of minerals including potassium, calcium, magnesium and also contain some vitamin C. So delicious boiled as the whole globe and served with melted garlic and lemon butter. Or slow roasted with olive oil and again lots of garlic! Spring time ...time to blossom. ๐Ÿ’—๐ŸŒธ๐ŸŒนFlash back to our first lockdown- Back then it was daily yoga classes in our household, and somehow a little easier for me to be in a healthy flow. The sun was shining and I used the time to nourish myself in my very own Rosie Retreat Space. I was also offering more online yoga and felt inspired to put my offerings out there into the world as much as possible! Has anyone else found it harder to stay focused and motivated this time round? I most certainly have! With the depths of winter, a lack of sunlight, and a year of off and on lockdowns, lack of familiarity and lack of consistent work flow itโ€™s not surprising that many of us have found it challenging to be grounded and healthy all the time, thatโ€™s totally understandable, fine and appropriate. Itโ€™s also fine to embrace the ebbs and flows of life. Itโ€™s not realistic to be our happiest or most energised all of the time, and we can learn just as much from these times of nesting and inertia. A time for reflection and incubation for ideas. However with spring starting to show itself and the sun rising earlier I have new found energy and feel inspired to start up some nourishing daily practices again, Including morning journaling, gratitude practice, meditation, movement, time in nature & optimising my sleep. I invite you to join me in cultivating some of these practices, they really do make the world of difference to your health, happiness and headspace.
