I’ve been in and around food for as long as I can remember… from my grandmothers’ kitchens, to working in hospitality from the age of 14, to opening and running my own restaurant in Salcombe for five years. And now Roots & Thyme since 2020… where have those 6 years gone?!

The last few days alone we’ve been out delivering two different corporate buffets a day! While weddings keep the weekends busy, midweek is all about feeding offices with fresh, ready-to-serve spreads.
Everything arrives in our signature pizza boxes or Kraft bowls— just open, serve, and enjoy 🍴

POV: you come out of a sound bath and lunch has magically appeared ✨🥗
These nourish boxes were created to be as inclusive as they are delicious - lots of dietary requirements for this event — gluten-free, dairy-free, nut-free, vegan friendly and free from potato + rice… but still filling, vibrant, and full of goodness 🌈
A little behind-the-scenes moment of how they came together:
Layers of fresh lettuce, protein-packed quinoa, crunchy red cabbage + sweetcorn, juicy tomatoes, crisp cucumber, smoked paprika chickpeas, roasted vegetables, shredded tri-colour carrots, pops of pomegranate, pumpkin seeds for that perfect crunch, and delicate micro sorrel to finish 🌱
Each one served with a fresh avocado dressing (in individual pots— no soggy salads here 😉), a biodegradable fork, and an edible flower because… details matter. 🌺
Delivered quietly while the room was in full relaxation mode, tucked into the fridge, alongside a tray of blood orange upside-down polenta cake 🍊
No disruption. No fuss. Just nourishing food, ready when they were.

We started the day with an easy grab and go breakfast pre-practice and then after our first flow of the day we jumped into spring with a colourful array of salads to accompany our Mediterranean vegetable frittata served inside but with such glorious sunshine blessing us, we ate alfresco and lapped up that vitamin D ☀️
Hot tubs, walks and chilling in the sunshine before our next practice and we are feeling wholesome and peaceful … and we’ve only just begun ♥️
