In this story, the onion skins from our kitchens are separated from the onions themselves and assumed to be destined for the bin. Thin, crinkled, and overlooked, they seem to have little purpose once the ingredient they protected is gone. Yet in the hands of our chefs, they are given a second life, featuring as part of the Onion Soup served at Ristorante Alle Scuderie. Every part of the onion is used here so that nothing goes to waste: the flesh as its base, the outer layers as garnish, and our protagonist, the skin, is toasted and added as a finishing touch.

Freedom to Roam
The richness of a Reschio egg is unparalleled. Its deep golden yolk reflects the wellbeing of the hens that produce it: free to roam within a protected area of the estate, sheltered from predators such as foxes and birds of prey. Over the years, the agricultural team has carefully shaped an environment designed to support the chickens’ natural behaviors and overall health.
In contrast to many commercial poultry systems, where hens are often selectively bred for high egg production, sometimes at the expense of their longevity and resilience, Reschio has chosen to rear Leghorn chickens, a historic Italian breed that originated in Tuscany. Naturally light and active, these hens are instinctive foragers; on the estate, they can often be seen ranging widely, even roosting in low branches.
This active nature encourages a more varied diet. With guidance from poultry specialists, the estate prioritises access to pasture, allowing the hens to forage freely. While it’s a common assumption that grains should form the basis of a chicken’s diet, hens are omnivores: a diverse intake that includes grasses, legumes, seeds, and insects contributes to both their health and the nutritional profile of their eggs. At Reschio, grains are offered in moderation, encouraging the birds to graze and forage more broadly.
At the heart of this approach is a straightforward philosophy: care for the animals well, and they will, in turn, take care of you. It’s no coincidence, then, that eggs take center stage in the breakfast served to guests staying in the Hotel and the Houses.
