You ever had Maitake? It tastes so good smoked over wood and paired up with sweet baked onions, confit garlic cooked peas, chive oil and charred coconut ash.
Just another dish we put together for our guests at 8 Plates, wonder what will be on the menu next time?!?!

A night out in the big smoke with @wholefoodwarrior to celebrate @eatgameuk awards and @bascnews , also it’s never a bad time to share a table and food with friends, especially the the bad influence that is the gorgeous @mctsingh
These are the “benefits” for a high profile venue.
The only benefits I see here are weighted towards the venue, not the potential chef!
Still playing on the “passion” heartstrings and the promises that will never appear.
No mention of salary scale, holidays etc….
Quite surprised they haven’t put “free uniform” and “on site parking”
Does industry recruitment need to change?
Our last night in Boston, a visit to a Harvard museum, then @wholefoodwarrior found @moecarestaurant for dinner, very cool, very tasty, great service and met some new friends, then found a random sign on the way back that made us laugh!
Boston, you’ve been a blast and we will be back, can you sort the weather out though? It was a tad chilly….

@8.plates x @fortheheretics 💛 Well this was a fun and interesting pop up - a different crowd than I’m used to and a fascinating bunch of people to talk to.
Was great to meet Gareth from @fortheheretics who are for sure one of the most interesting English wine producers right now. Got to try the full range, all of which were lovely - and took a few bottles home, even better!
The food by @realmarklloyd showed lots of great technique and interesting, responsibly and well sourced ingredients. Some lovely flavour combos in here - the bitter sea buckthorn with the rich dark chocolate cremeux was very very good and Mark is definitely a great person to talk to, dropping in great bits of industry knowledge and demystify some ‘cheffy’ stuff so we could better understand our meal.
Definitely a rowdier evening than I was expecting, but then again should have with lots of great wine flowing! I have to say that @destination105westbridgford is a stunning venue too - I can only hope to come here more often in the future!
