Chef Patrick Phelan (@pphelan ) builds his melon and stracciatella course at Lost Letter (@lostletterrva ) around the kind of summer produce that passes through the kitchen only a few weeks a year.
Picasso melon sets a soft, fragrant tone, met by the faint smokiness of grilled shishito peppers and the cooling crunch of cucumber. A final drizzle of citrus-dill vinaigrette grounds the elements to the restaurant’s Mediterranean lean.
The dish has a relaxed, end-of-summer feel that reflects how Phelan writes menus: day-to-day, farmer-driven, and grounded in what Virginia growers can offer at their peak.
