As per tradition, @pompettecph is back in NYC and pouring wines @opsnyc because, as evidenced by the BEST pizza and pizza restaurant in the world, yes, we are talking about Ops Pizza, world-class pizza goes well with world-class natty wines. Now, what will make this already iconic combo better? World-class, super-rare, not-officially-imported-into-the-US, natty wines. Lol
Also, to tie an even bigger bow to it our sister @poulettecph will make some specials on the day.

To all of our US-based friends, our besties @leosourdough is turning 5, which is a crazy milestone!
To help them celebrate, we will bring our fried chicken and mapo tofu sandwiches.
Our sister, @pompettecph , will also, as per tradition, bring some wines. We will pour some super secret fun stuff that doesn’t make it stateside unless it’s via some unofficial suitcase.
For those who don’t know Leo, they have the second-best pizza in the world (@opsnyc is number one, and we all know it).
For those who don’t know us? We are just a bunch of Kewpie-mayo chugging, chicken frying dorks who happen to make some fried chicken and mapo tofu sandwiches sometimes - and sometimes we care about wine.

Honestly? Yes, at some point. We will make as many sandwiches as we can, but for obvious reasons, we can not produce unlimited amounts. We will make more than ever and more than last time, but please come early if you want to take advantage of it.

Wine of the week: Mura Mura, Mataburro (Merlot, Grenache & Muscat à Petit Grains, 2021) produced by Laurent Roger in Roussillon, France.
Rosé season is in full swing, so this week it’s all about the wines of Mataburro. Pompette pal and all round good guy, Laurent Roger, makes the most delicate of wines in one of toughest climates in all of France. His vinyards deep in the Roussillon rarely see rain and yet he manages to produce gently perfumed and super fresh wines that share a common thread with his former mentor, the late, Great Alain Castex. The Mura Mura, a blend of direct press Merlot, Grenache and Muscat à Petit Grains, is a beautiful aromatic and herbal expression that is perfect for the summer season.
Another Pompette team trip is now a part of our cherished memories, and this one was truly exceptional. We toured picturesque Ardèche and enchanting Auvergne, reconnecting with old friends and making new ones.
Our first stop was the idyllic Valvignères, where we were warmly welcomed by Anders Frederik Steen and Anne Bruun Blauert. Anders, a Danish native, has a rich background in the culinary world, and his transition to a vigneron has only added to his wealth of knowledge. We spent a delightful afternoon in his cellar, tasting through every barrel.
Next we were on to Ardèche, where we spent the morning with Samuel Boulay. He is a quiet and meditative man who eschews all mechanical machinery from his humble cellar to not disturb the wine in any way. Seemingly at odds with the modern world, Samuel makes wines that feel like they’re from another time—rustic, pure, and unmistakably his.
Next, it is up to Madriat in Auvergne to visit Aurélien Lefort. Aurélien just does things differently. A true artist whose home is crammed with his art, his distinctive approach in the cellar makes for some of the purest and most distinct wines you’re ever likely to taste: a perfect host and an incredibly kind soul.
The next day, we spent time with our new friend, Hannah Fuellenkemper. We were deeply grateful for the opportunity to taste and discuss her wines, especially as she is still in the early stages of her winemaking journey. Her positive energy was infectious and reflected in her wines, a memorable stop!
Next was the legendary estate of Frédéric Gounan, Vignoble l’Arbre Blanc. It is now in the capable hands of our dear friends Jacob and Julie Ottosen von Rosen. It was a pleasure to see them at work on their first solo vintage, and we can’t wait to see what they’ll do next.
Our final visit was to our dear friend Patrick Bouju. A man of humility and kindness, Patrick’s wines are a testament to his skill, striking the perfect balance of drinkability and complexity. We tasted from the bottle and the barrel, and could have spent hours with him, if not for our impending flight. A true legend of the Auvergne.

Wine of the week: Autochtone (2020, Romorantin) produced by Julien Courtois in Loire, France.
Son of natural wine pioneer, Claude Courtois, brother of Etienne Courtois and a legend in his own right, Julien Courtois and his partner Heidi Kuka make some of the most expressive wines in the Loire. Based in the Sologne, they tend old vines of predominately lesser known varietals from the Loire. Strictly zero-zero, and using only plant based solutions in the vinyard, Julien works towards low yields to ensure maximum concentration in his wines. In the cellar Julien favours old oak and a long élevage, striking the perfect balance between complexity and drinkability. The Autochtone is 100% Romorantin from flint/clay and silica soils, with bags of minerailty, racy acidity, gentle stone fruit with a light tropical note. Insanely good wine, and dare I say it, 2020 might be the vintage of his life…so far at least.

Christian makes wines with a precision and elegance that is unparalleled in the world of natural wine. Is it a light red or a dark rosé? Guess it doesn’t matter much. A spark of effervescence on opening gives way to gentle berry fruits, lifting acidity and a minerality that is the hallmark of Christian’s wines. From a 60 year old plot of Blaufränkish that, over the years has been replenished with over 20 different varieties, everything is picked, co-fermented and aged together.
This Thursday 6 June Pompette will celebrate its 6 year Birthday in Villette courtyard. Only 6 DKK/glass the first 60 minutes/until sold out!
