A lot to love @breadandsaltbakery and was pleasantly surprised to see their Easter only pizza rustica. This stuffed pie was the inspiration for Rocco Palese to create stuffed pizza @nancyspizza in Chicago in 1971. The thinner tomato pizzette was also quite good! #jerseypizza
The folks behind @daisieschicago opened @radiclechicago in the original space, and guess what? There’s a serious pizza program. Baking in @pizzamaster_mpm for about 4 min., these tensile pies combine two Italian flours, and the dough begins with a biga Day 1, then a full mix Day 2, resting until Day 3. @biancodinapolitomatoes and @grandecheesefoodservice (except on the Marg, which gets hand-pulled mozz). Chef also sent out a superb clam & Yukon Gold white pie, which is rarely seen in the Midwest. Definitely going back to try more of the menu (I want the mortadella!) and fingers crossed we get Meghan and her team to join us @pizzacityfest in August. Thanks Chef! #pizza #chicagopizza

Really enjoyed meeting Frank @eastvillagepizza today, recording a show for a future podcast. His story is more of an odyssey: moved here from Turkey, started as a delivery guy then bought the place six years later (2003). He’s made a few tweaks to the recipe over the years. Always been a fan of @georgesdeepdish - his pies are among the best in Chicago (only deeps using an all-natural starter). But George recently picked up a @proluxehq heated double plate dough press that I worked with them on, and after dozens of tweaks (mainly bumping up the oil) he has a great system down for producing one of Chicago’s top 3 tavern style/Chicago thin pizzas. After he presses at 240F, he cures for just 3 hrs and then it’s off to the races. Baked at 500 for about 10-12 minutes, the pies are perfection. More toothsome than the more popular pies being written about in the city’s more popular neighborhoods, and the middles are just as rigid as the edges. Only issue is you gotta shlep to Edgewater. But I’ll be damned if this isn’t one of the best thins I’ve had this year. Way to go George! #chicagothincrustpizza #tavernstylepizza

In L.A. for a couple of days, doing R & D among other things, and we stopped @bubandgrandmaspizza to talk with CDC Jeff and owner @crapkatapult about this spin-off from the beloved @bubandgrandmasbread in nearby Glassell Park. They’ve been open about 6 weeks and they admit they’re hitting their stride with the dough now. The white pie we had - escarole, garlic confit, peppers, and some crazy-good red pepper sauce with Calabrian chiles & honey, followed by a prosciutto panko dusting, was off the charts. We haven’t seen a crumb down the middle since we visited @pizzafrankies in Montreal! People of SoCal: go to Highland Park stat. #pizza #lapizza
