Want to learn how food and beverage businesses are actually built, from someone who has done it himself? Food & Beverage Entrepreneurship (SEM 488) is a project-based course where students will explore what it takes to create a venture in the food industry, from restaurants and consumer brands to other food and beverage businesses. The course will be taught by @peter.keith_ , an award-winning chef, entrepreneur and founder of @meuwlys . Peter started his career as a dishwasher at 14 and went on to earn his Red Seal, Blue Seal, BCom and MBA, cook in some of Western Canada’s top restaurants, represent Canada in international culinary competitions, and build several successful food ventures in Edmonton. Through weekly discussions, guest speakers, case studies and a hands-on venture-creation project, students will learn about the entrepreneurial journey from local food industry leaders and explore one thing that always brings people together: food. This course is open to students from across campus and is a great fit for anyone who has ever thought about opening a food business but didn’t know where to start.

The Prep List Lesson 3: Share Your Recipes In a fine dining kitchen, recipes are often scattered among hand-written notebooks, or memorized. Menus change, new prep items are needed, and a young cook inevitably needs to hunt down the "perfect" technique or recipe from the notebook of a more experienced chef. All too often, experienced cooks are reluctant to share their tips, tricks, and self-perfevted recipes. It's the classic scarcity mindset: "If others know my secrets, my own value on the team diminishes." These types of people gatekeep their best tips and techniques, forcing others to "learn the hard way." The best cooks I've worked with were always quick to share, teach, and mentor. They knew their value was more than a list of ingredients or a special technique. They took the time to help others learn and perfect the craft. They were: More approachable More respected More trusted by the team Teams naturally form around these mentors. Meanwhile, the gate-keeping "divas" are focused only on themselves. The Lesson: Mentorship is a gift worth giving. Sharing your knowledge levels up the whole team... and feels deeply fulfilling for you. Teaching someone the best way to do the job doesn't make you replaceable - it makes you invaluable. @madebymarcus is now hosting Ice Cream Making Workshops! I was so lucky to be hosted for a preview of their new teaching kitchen at the Mill Creek location - we enjoyed a fun and informal workshop complete with a welcome glass of wine and ice cream sampling, a little lesson on the science of ice cream, and a mixing demo. Then, we each made up two pints of our own creations using their delicious lineup of flavours, "inclusions" like butter cake, pretzels, almond brittle, and birthday cake, plus sauce ripples like their classic goat milk caramel and blueberry tonka bean. It was such a fun and delicious evening - what a fun idea for a #yeg date night or holiday party! I'm proud to support NAIT’s THIS MATTERS campaign and stand with those impacted by gender-based and sexual violence. As members of the hospitality industry, we need to talk about this more. Restaurant kitchens have historically been an unwelcoming or even unsafe space for women and genderqueer people. This is finally starting to change, but we need to keep making it a priority.
