Last week, in celebration of Earth Week, we welcomed friends @dumolab and @upennfarm
to Quaker Kitchen for a special culinary session focused on sustainability. Together, we made grain bowls showcasing sorghum, a resilient, nutrient-rich grain grown locally at Penn Farm and explored through DumoLab Research’s work in rethinking how food byproducts can be repurposed and reimagined. The bowls were complimented with a maple syrup vinaigrette, and early spring produce from the @upennfarm . 🧑🏻🌾👩🏾🌾👨🌾
🌎 Earth Week: From Peel to Plate: Circular Food Systems at Penn
This Earth Week panel brings together Penn Dining chefs, local food partners, campus growers, and researchers to explore how informed decisions around food can reduce waste, lower emissions, and build more resilient food systems. Panelists will share how Penn is closing the loop across the food lifecycle, from regional sourcing and plant‑forward cooking to composting and innovative research that turns food scraps into new materials.
