Proud to have a piece in the gorgeous new issue of @dossier.mag about how @themadfeed inspires and educates chefs from around the world. I heard talks by the phenomenal @clausmeyerdk and Matt Orlando from @esserestaurant_cph , learned about fisheries and tasted fermented pine cone @restaurantkadeau , and got to talk to @theluxurycollection chefs like @chefelihusepulveda about how they think, source, and cook as sustainably as possible.
