Not quite (not at all, actually). Turns out, not all cheese is created equal: New Roots cheese slashes CO₂ emissions by 60% and uses 40% less water compared to animal based cheese. Officially, Le Gratiné was created for pasta, pizza, gratins, rösti, lasagna, nachos, baked potatoes, and all the socially acceptable situations where grated cheese is supposed to be melted on top of something. But then again, society also told us cows milk is a normal thing for humans to drink, so clearly it’s been wrong before. So yes, you can sprinkle it over a bubbling dish of lasagna like a responsible adult with a meal plan; but you can also eat it straight from the bag, standing in front of the fridge. “Serving suggestions” is a social construct, don’t let anyone tell you how to live your life 🪤

Smashed Potato Muffins
mit Dill-Creme-Fraiche & Tomaten
Du brauchst für 12 Muffins:
- 12 mittelgroße gekochte Kartoffeln
- ca. 250 g pflanzliche Creme Fraiche (@new__roots )
- 1 Knoblauchzehe
- Dill
- 300 g Cherrytomaten
- Basilikum
- Olivenöl
- Oregano
- Salz
Zubereitung:
Die gekochten Kartoffeln in eine Muffinform geben und mit einer kleinen Tasse oder einem Glas vorsichtig smashen. Mit etwas Olivenöl und Salz bestreichen und bei 200 °C ca. 30–35 Minuten backen, bis sie goldbraun und knusprig sind.
In der Zwischenzeit die Creme Fraiche mit fein gehacktem Dill, gepresstem Knoblauch und etwas Salz verrühren. Die Cherrytomaten halbieren und mit Olivenöl, Oregano und Salz marinieren.
Die knusprigen Kartoffel-Muffins gut abkühlen lassen, mit der Dill-Creme füllen und die Tomaten darauf verteilen. Mit frischem Basilikum toppen & genießen.

You know the “spot the anomaly” game? Striped tablecloth, colourful cereal, radio playing Dust in the Wind, crossword on the table: this whole scene looks like a vintage breakfast ad from the late 70s, back when every morning came with the promise of a “balanced breakfast” and absolutely no critical thinking about marketing and late-stage capitalism. But the yogurt comes as reminder that we’re not in the 70s anymore. Because unlike the original version of this nostalgic little breakfast fantasy (dare we say “delusion”), ours didn’t come from a cow. In this era today, we would argue that animals aren’t resources, objects or machines, and we should stay away from exploiting them. We would argue that through the same craft of fermentation, we can make a product equally as tasty and creamy, but much, much better for the animals and the planet. Nostalgia had a good run, but it has very little to say about the future, unlike us (as you can judge by the length of these captions). Happy Sunday everyone🍦
