This Saturday we will be rolling out our new Wine of the Month - Les Frites 🥂
Les Frites is made from organically grown Chenin Blanc sourced from Margaret River fruit, with 30+ year old vines delivering incredible freshness, acidity and depth.
For this release, Che explored Chenin Blanc in a new way, combining skin contact (3 days with daily foot stomping) for texture and tannin, with direct-press fruit fermented in seasoned oak. Select barrels were stirred for richness, while others were left untouched to preserve freshness and drive.
The result is a layered, golden, seriously moreish Chenin Blanc.

Pruning is one of the most essential practices in the vineyard. Done during the vine’s dormant season, it helps control growth, manage yields, and improve fruit quality. By removing excess wood and selecting the right canes to keep, we guide the vine’s structure and set the foundation for a balanced, healthy harvest. Without proper pruning, there’s no quality wine it all starts here, in the vineyard!
Neoteric began the 2025 vintage with its first-ever 100% on-site processing day. Certified organic Chardonnay was hand-harvested in the early morning from Wayfinder Vineyards in Wilyabrup and transported directly to the Neoteric Winery.
This marked the first press in Neoteric’s production history. The fruit was whole cluster pressed to stainless steel for settling, then clean-racked off heavy lees into neutral French oak barrels.
Native yeast fermentation commenced spontaneously, aligning with our low-intervention philosophy and commitment to expressing site and season.
Making stuffed squid is like making white wine. You put some Sicilian flavours in squid tubes and leave it in the oven for a bit. At NeoTeric we put Chardonnay into barrels and age it for 10 months.
Either way, FLAVOUR TOWN!
