We challenged ourselves with this question when collaborating with @esserestaurant_cph . Together we’ve created drinks inspired by the restaurant, guided by sustainability, and made with the same outstanding ingredients, techniques, and obsession with flavor.

VIP PERK! 🇩🇰 The Hungries stepped into the world of @muridrinks for a hands-on tasting and blending workshop – and left with an exclusive perk!
Last week, our members got a proper deep dive into everyone’s favorite non-alcoholic producer in Copenhagen, learning how these alcohol-free concoctions are actually made. After a guided tasting in their beautiful tasting room – breaking down the layers, techniques, and ingredients behind each blend – it was time to get hands-on. 🍾
Everyone got to experiment with their own blends, adjusting acidity, sweetness, and structure to create something personal and leaving with a bottle to take home. Huge thanks to the Muri team for opening up their space and sharing their world with us, and to @skitgott for capturing these great shots. 🙏🏼

Mussels in a drink? Potentially weird. But when @esserestaurant_cph challenged us to use the spent smoked mussels from their dashi, it got our creative juices flowing.
We have been testing the idea of a clear Bloody Mary-esque blend for ages now, and we love the Canadian addition of clam juice in the iconic ‘Clamato’, so why couldn’t smoked mussels work macerated in clarified tomato water? Once we added a kefir made from lovage to bring the celery vibes we were getting somewhere.
But the drink was still too savoury to be as elegant as required. @mattorlando_esse suggested we add a brown butter and kombu fat wash to lend the texture more silkiness, and the addition of our amazake gave the blend another layer of complexity.
You can now find the resulting blend alongside the main course at Esse. Needless to say we’re very proud of it. We think it’s a great signpost for what non-alcoholic pairings of the future can be.
