In honor of 🌾Whole Day for Whole Grains🌾here is @Breadtopia 's recipe for 100% whole grain baguettes.

Ingredients
425g fresh-milled hard red winter wheat berries (3¼ cups flour)
370g water (1½ cups)
115g sourdough starter (scant ½ cup) 9g salt (1½ tsp)
Baker's Percentages
100% whole wheat flour
87% water
27% sourdough starter
2.1% salt
Saltolyse the dough for 1 hour.
Knead in the sourdough starter.
Do four rounds of gluten development with 20-30 minute rests in between.
When the dough has expanded by about 65%, divide and preshape, two baguettes or four demis.
After a 20-30 minute bench rest, shape the baguettes and proof them in a couche for 30-60 minutes.
Preheat the oven, baking stone/steel, and steam setup for at least 30 minutes at 500F.
Boil a cup of water for the steam tray.
Score the baguettes, transfer them to the oven, and add the hot water to the steam tray.
Bake for 15-18 minutes.
Shut off the oven and leave the door ajar for another 20 minutes to further crisp the crust.

🇬🇧 K for Khorasan wheat! 🌾
Today we continue with our knowledge of ground grains! Khorasan wheat is an ancient grain and a precursor of wheat. In contrast to wheat, Khorasan wheat is more robust against diseases and pests, but produces lower yields. It can be used instead of wheat and spelt. Unlike wheat, Khorasan wheat has only two types of flour, a light and a wholemeal variety. It has high gluten and is therefore particularly suitable for pasta or baked goods. Khorasan wheat lends a nutty note to bread doughs and keeps the baked bread fresh longer, as it contains a special form of starch that delays retrogradation. 👌

Heute geht es weiter in unserer Mahlgutkunde! Khorasan-Weizen
ist ein Urgetreide und ein Vorläufer des Weizen. Im Gegensatz zu diesem ist Khorasan-Weizen robuster gegenüber Krankheiten und Schädlingen, liefert aber geringere Erträge. Khorasan-Weizen kann anstelle von Weizen und Dinkel verwendet werden. Anders als bei Weizen gibt es bei Khorasan-Weizen nur zwei Mehltypen, eine helle und eine Vollkorn Variante. Es weist einen hohen Gehalt an Klebereiweiß auf und eignet sich deswegen besonders gut für Nudeln oder Backwaren. 🍞 Brotteigen verleiht es eine nussige Note und hält die fertig gebackenen Brote länger frisch, da es eine besondere Form der Stärke enthält, welche die Retrogradation in verzögert. 👌

🇬🇧 G for green spelt! 🟢
Green spelt (freekah) is the spelt grain harvested before it is ripe and dried directly after its harvest.Originally, the spelt was harvested before maturity in response to periods of bad weather. Since the dried kernels - boiled in water - were tasty, the tradition developed of harvesting part of the spelt as green spelt. 🕚
In the kitchen, green spelt is more versatile than almost any other grain. 👌 The whole grains are suitable for cooking as a side dish, for "risotto", as well as for soups, salads, and stews. Coarse meal, medium grade meal, and semolina made from green spelt all make a good basis for dumplings, vegetarian patties and „meatballs“, meatless fillings for cabbage rolls, for casseroles or a hearty spread. But beware: Unlike spelt flour, flour from green spelt is not suitable for baking on its own.☝

🇩🇪 G wie Grünkern! 🟢
Grünkern (auch Grünkorn) ist das Korn des Dinkels, das halbreif geerntet und unmittelbar darauf künstlich getrocknet wird. Ursprünglich wurde der Dinkel als Reaktion auf Schlechtwetterperioden vor der Reife geerntet. 🌧 Da die getrockneten Kerne – mit Wasser gekocht – gut schmeckten, entwickelte sich die Tradition, einen Teil des Dinkels bereits als grünes Korn zu ernten. 🕚
In der Küche ist Grünkern so vielseitig verwendbar wie kaum ein anderes Getreide. 👌 Die ganzen Körner eignen sich gekocht als Beilage, für „Risotto“ sowie für Suppen, Salate und Eintöpfe. Schrot, Grütze und Grieß aus Grünkern sind eine gute Basis für Klöße, vegetarische Frikadellen und Buletten, fleischlose Füllungen von Kohlrouladen, für Aufläufe oder einen herzhaften Brotaufstrich. Aber Achtung: Das Mehl aus Grünkern eignet sich im Gegensatz zu Dinkelmehl nicht zum Backen. ☝
Having a Mockmill inspired me to make this simple, super delicious chickpea pancake (fainá) from scratch, trying it in the traditional unfermented way and again with a bit of sourdough starter.
I even milled different legumes like black beans, and made fainá with them too. This flexibility to explore ingredients is one of the many reasons I mockmill.
