Salted caramel ice cream with coffee caramelized rice puffs, and chocolate meringue.
This was VERY good! it’s a sort of baked alaska/sundae situation. I think the main theme throughout is toasted sugar, and the sweet but bitter flavor of it came through really well. I think it works perfectly as an ice cream, more so than it would as a cake or something like that because it’s a very rich flavor. But overall a very fun and tasty dish. I’m very proud of it
Also meringue is a very good way to use up the leftover egg yolks from the ice cream!

I’ve been seeing these dishes where people will flatten food with a tortilla press. One of really common dishes people are doing are crudos. I’ve also been seeing these like chips based dishes with like prosciutto draped over the chips. I was like “hmmm, what if this was Maryland themed? 🤔” so here we are.
Crap chips, crab salad, corn dijonnaise, dill.
Corn has lots of starch in it, so when you blend and strain corn you get this corn juice (or corn milk) and when you cook it, the starch thickens the liquid into a sort of mayo consistency. Mixed it with some Dijon = Corn Dijonnaise
I think If I made it again I’d make a dill salad with some shallots, and a little vinegar for a prettier plate (the corn makes the mustard look like french’s lol) and a bit of acidity. But otherwise, a pretty good first try in my opinion

Some super easy but really tasty and interesting kettle corn.
I’ve been using this Cameroon Pepper a lot as a sort of secret ingredient. It’s a main ingredient in a spice blend called Kan Kan Kan that I’m using in a recipe I’ve been testing for a little over a year now. Anyway it’s a sort of smoky but fragrant pepper it has a nice kick but I like it a lot because it doesn’t linger and make you want to like stop eating it which I think makes it perfect for popcorn.
I made a little sugar mixture with ginger, turmeric, nutmeg, the pepper, and some salt.
Popped the corn in some bacon fat with a little olive oil because bacon tastes good. I honestly don’t know if this is sweet or savory but it tastes good.

Tiramisu Cake
Coffee soaked vanilla cake, with cream cheese whipped cream, and crystalized chocolate.
I’m not a cheese eater, so I don’t eat mascarpone, ricotta, or any other cheese product, but I have been using cream cheese in my frosting recipe for years and years, basically as a way to make a stabilized whipped cream.
I’ve had tiramisu a few times and really liked it but always thought the cocoa powder was a bit unnecessary as you really can’t taste it, so I added crystalized chocolate as a way to add some more chocolate flavor to the cake without making any main component chocolate flavored.
I’ve never been good at making candy, so making the chocolate was racking my nerves a bit, but it worked out pretty well I think.

Blueberry Cornmeal Scones
I have three pets, a cat named Blueberry, a dog named Cornbread, and another dog named Biscuit.
Sometimes when our family is talking about the food they’re named after they think we’re talking about them and get all excited, sometimes I’ll emphasize one of their names on purpose to annoy my mom.
So inspired by them, here’s a Blueberry Cornbread Biscuit
It was a little dry I’m pretty sure because of the absorbent nature of cornmeal, but I whipped butter with cardamom and maple sugar to go with it and it paired really well. Might try again with more blueberries or try and pre-hydrate the cornmeal, but otherwise it came out how I wanted.

Rocky Road-esque cake.
Chocolate cake, chocolate ganache, toasted meringue, pecans.
Used to eat rocky road ice cream when I was younger because my grandmother loved it, but I hated the texture of the cold marshmallows, also I dislike how almonds kinda dry my mouth out.
Anyway, I saw a s’mores cake on Pinterest like a week ago and thought it looked really good, but I also had a bag of pecans that my uncle sent to me like a year or two ago and figured it’s time to use them.
After spending like 45 minutes last night cracking half of the bag, I assembled the cake today and completely forgot to add the nuts. It was really sweet without them, but adding them afterwards made it really good, and made me even more upset that I forgot them.
