Big stuff in the works for tomorrows Mothers Day King Farmers Market - finally got my hands on aunt Maxine’s brownie recipe of my childhood from @wiredntwisted and worked it into a beautifully fudgy wudgy whole grainy version of itself feat @cloudforest dark chocolate and toasted @chimacumgrain buckwheat flour (yes that means it’s GF!)
Also loaded up on strawberries and rhubarb today from @ejido.oso for danishes and strawberry rhubarb galettes ! May have one or two other special new things on the table for y’all, but not if I don’t get offline and into the dough - see y’all tomorrow!
Strawberries are officially on the menu !!
We’ve got an almost full changeover on the danish lineup this week, including the first fresh strawberry an cream cheese danishes of the year, Asparagus Green Garlic Pesto Danishes with Fiore Sardo, and a New Potato & Feta danish with a dilly green sauce that is not to be missed. At PSU today (Saturday) till 2 pm or sold out, and then we’ll be out at the King school tomorrow for the first Sunday market of the year! Hope to see y’all out there this weekend!
Starting prep for this coming week with 50 or so lbs of @sasha__moghadam baba special green garlic, which has been a sign of spring and the first of the big annual projects for the last few years. Blitzed up, fermented, pesto’ed, this tenderest sweetest most perfect form at the essence of garlicness might be my favorite of all vegetables, and nobody’s has quite the zhuzh that’s Sasha’s brings to the table.
Once the garlic is taken care of, it’ll be full steam into prep for our biggest weekend of the year, where we’ll be at both the PSU market and also back in the Northeast for the first King Market of the year! It’s hard to believe it’s already that time again, but believe it or not we’ll be in our usual spot at the King School this Sunday with as many loaves and treats and cookies and things we can manage to make for y’all in the next 5 days. Think rhubarb, strawberries, asparagus, new potatoes, marmalade, coffee cake(?) and lots of other very springy things to get your hands on. Lots to do between now and then and the garlic is waiting, but we can’t wait to see y’all this weekend!!
One of my favorite bakery errands to get the week started - picking up a big box of masa (and a generous handful of fresh tortillas!!) from our friends at @threesisterspdx . From basically day one of this bakery project we’ve been using their nixtamalized corn wherever we can - it’s what makes some of your favorites like the Masa Sun loaf and our corn cookies what they are!
Local can mean a lot of different things when in comes to grains. Grain systems are big networks of farmers, transporters, processors, millers and more that all work in concert to get grain crops from seed to table, and we are so lucky to work within an amazingly robust and diverse grain ecology here in the northwest. Three Sisters are a really special part of that system - taking organically grown corn and processing it in the traditional way to make tortillas and fresh masa for restaurants and consumers across the city and the whole region. Like many older grain processing methods nixtamalization has become a rarity in our food systems, but the flavor and nutritional benefits of this way of processing corn just can’t be denied! If you haven’t already, visit the Three Sisters booth at the farmers market, or their shop in SE Portland - if you ask nice there might even be a fresh tortilla in it for you too!
After a few weeks without, we’ve got @chimacumgrain Climate Blend back in the croissant mix and things are looking good!!!! I love this amazing colorful flour and very where I’ve tried it so far but it maybe is my favorite in the laminated pastries - the way the rainbow of bran flakes show themselves off in the dough and the tenderness and flavor it brings to them is hard to beat!!
Looking like the rain is going to let up just in time for market tomorrow morning so plan accordingly, we’ll have a really nice spread of pastries and breads for ya at PSU from 830-2 or sold out!

Nancy and Jude are running the booth today so look for the butcher paper and not my (Jerm) face you’re used to seeing - we’re in our same spot between Deep Roots and Salmon Creek Farm we’ve been in all winter, markets on 9-2 or till all the breads gone!
Bread like this!! Is what this project is all about. Full of whole and stone ground grains from across and beyond the wheat family, naturally leavened, well fermented, and delicious - before anything else we are a bread bakery.
We’ll be at the PSU market tomorrow, with bread like this (so you can make your own grilled cheeses like the one on the second slide), and pastries that follow the same course, and a whole bunch of other good food. It’s been a wonderful spring market season, however else we may feel about the warm weather, it makes for a lovely morning at the market. The farm stands are lush with tender green things and I’ve even seen a strawberry or two out there if you can get yourself out of bed early enough - market opens at 9 for any brave souls that want to try their luck!
Feels like we’ve been on a bit of a run in the CrossFit department since coming back from break - lamination has been on point and these beauties are showing it off! Big winter/spring equinox week type things happening on the menu this week like an unexpected bonus week of Meyer Lemon Marmalade Danishes made with some of the last of the good California winter citrus we get blessed with. And maybe most excitingly the return of the polenta roasted carrot and spring onion savory danish (pictured above), one of my favorite pastry discoveries from last year whose season has arrived again!
We’ll be at PSU tomorrow, there will be lots of bread (yes including fruit bread), and the sun will be shining! Hope to see you out there
Some nice green things on the menu for St Pattys weekend, we’re at the market till 2 or sold out with lots of bread and cookies and sweet and savory pastries for your day! These kale raab danishes with arugula pesto are not to be missed!!
Croissants like this one and a really lovely lineup of breads and pastries ranging from winter citrus to preserved summer fruit to spring is in the air! Last 2 Saturdays have been busy and things have been moving fast at the PSU market so don’t wait till too late in the morning to come out and see us!
