i had a Russ brand racoon stamp when i was a kid. i found a mint one on ebay 30+ years later, and the little stamp pad in the red pot still works.
unbeknownst to me, i won some ponies on a low offer last week and this is winter’s favorite. the bottom says product of hong kong. the raccoon says made in china.
there was a store at surrey place mall called Wilson’s and i remember self inking stamps in a with clear plastic cloches. i had a blue owl with the word SMART, and maybe a flower. maybe the flower was pink and it smiled. i was maybe 5 or 6 years old. i can’t seem to find these ones on ebay.

The search for GF Asian birthday cake. There is no shortage of online communities and blogs for making GF bread, but when I want to bake something else, google only rounds up crap with all-purpose GF flour. Finding a GF chiffon sponge cake yielded only one recipe by @ultimateomnoms (is it just me, or is google showing less and less websites nowadays?).
I’d tried making a gluten based mango cake before, and it involved cake flour and eggs, and I remember it tasting eggy. The last gluten free “yellow birthday cake” my kiddo requested was rich, heavy and too sweet, like a fancy wedding cake but without the fondant. Now looking between traditional GF cake recipes and this one, it’s 250g+ of sugar vs 80g, so therein lies the rub. Epicurious uses 2 tsp of baking powder in their gluten based sponge cake recipe, while asian blogs don’t seem to use it. I tried adding it and also subbed in millet starter and flour, eliminating the water.
It was a little dry, I forgot to adjust for the convection of the air fryer - I baked in a 9 inch round pan at 340F until set at 36 minutes but it should have been 315F. It didn’t taste as eggy as whatever youtube video I had followed for a legit asian cake back in the day, but there were bites where the chalaza of the egg must not have been homogeneous. There were also small areas that didn’t cook evenly. I will also blame the chalaza.
Here’s my adaptation of @ultimateomnoms ’ recipe
Whisk:
6 egg yolks
180g sourdough starter (1:1.2 millet:water ratio)
Whisk:
58g millet flour
2 tsp baking powder
1 Tbsp milk powder
pinch of salt
Beat to peaks:
6 egg whites
1/2 tsp lemon juice (I didn’t have cream of tartar)
80g sugar
1 tsp vanilla extract
