Pascal Jolivet is one of the most important and recognized names in the Loire 📍
Minimal intervention in the cellar, spontaneous or gentle fermentations, with great attention to expressing the individual terroirs (silex, limestone, clay).
👁 In the glass: bright straw yellow with greenish reflections
👃🏽 On the nose: ripe lemon, green apple, herbaceous notes, and a pronounced smoky minerality 🌫️
👄 On the palate: fresh and vibrant attack, clear mineral tension, clean finish, long and saline 🧂
Now… although it’s not really my style, there’s no denying the wine is very clean, elegant, and precise, without excessive aromatics.
A well-made wine, but it doesn’t fully match my personal taste 🤷🏽♂️
