Let’s Go AlFresco episode 1: BBQ’s best friend Citrusy Crunchy Sumac Onions

White onions or salad onions x 2
1 tbsp sumac
Generous pinch of citric acid
Salt
Chopped parsley
Lemon juice

Mother’s Day Special My mum’s Favourite: Mango Shortcake
Ingredients:
Chiffon Cake: 2 8” pans, greased and lined 🥭6 large eggs 🥭200 gm Granulated sugar 🥭195 gm Cake flour plus 5 gm of cornflour 🥭warm Milk 30 gm 🥭warm vegetable Oil 60 gm 🥭Vanilla extract 1 tsp 🥭1/2 tsp Baking powder
Whisk the eggs and sugar for 8-10 minutes and then add the rest of the ingredients one by one as shown, folding in gently Bake for 180 C with a water bath for 35-40 minutes
* Adjust the time & temperature accordingly.
Filling and topping: 🥭Double cream 600 g 🥭Granulated sugar 45 g 🥭Vanilla extract: 1/4 tsp 🥭 3-4 large mangoes

Loaded BBQ Chicken Nachos

INGREDIENTS:
Boiled/ roasted chicken
Mayonnaise
BBQ Sauce
Chicken powder/vegetable seasoning
Salt and black pepper to taste
Sweetcorn, red onion and capsicum, salami, olives, jalapeños
Mixed grated cheese
And Nachos

Easy Mango Tiramisu Dessert

Mangoes as many as you like
Savoiardi aka lady finger biscuits or cake
1 cup Whipping cream
250 gm Mascarpone cheese
1/2 can Condensed milk
Mango puree
Mango jelly (make as per packet instructions with a little less water then required)
Whip cream mascarpone and condensed milk together with mango puree until fluffy, pour over very lightly soaked biscuits and chill for 2-4 hours before pouring over the jelly. Chill for 2-4 hours. Top it up with mangoes and serve

Mango & Passionfruit NewYork CheeseCake - the American classic with a tropical sauce. It’s rich, creamy and decadent.
So let’s ace your festive season dinner parties. It is a showstopper of a dessert.
Ingredients:
180 gm biscuits
100 gm melted butter
600 gm cream cheese
180 gm granulated sugar
300gm sour cream
225 ml double cream
3 eggs
3 tbsp cornflour
3 tbsp vanilla extract or 1 tbsp heaped vanilla paste
1/2 lemon juiced

Method:
Follow the reel, bake in a in a water bath in a preheated oven at 180 C for first 30 minutes then at 150 C for 40 minutes. Turn off the oven and let the cake sit in the oven for 1 hour before taking out and chill 4-6 hours
