Spent this past week in San Francisco working alongside the Tartine croissant team, helping bridge SF + LA. It was a lot of work, and it wouldn’t have been possible without some key players who made the transition so much smoother. I’m really appreciative of everyone involved—such a rewarding experience.

We have a schedule for everything. Lamination. Mixing. Scaling. Packing.
Take a quick look on what an average mix looks like. All of this takes about 45 minutes, not including the pressing of the dough after the bulk fermentation.
You'll see scaling out the perferments, adding wets, dries, and taking note of mixing time and temperature. Then comes scaling out what each dough weighs and pre-shaping it. It rests in the freezer for a few hours and then into the walk-in overnight.

So much goes on behind the scenes from the time the ingredients hit the mixer, the freezer, to the sheeter, the proofer, the oven, and then the display case.

Look at the honeycomb! (inside interior structure)
It's open, airy, medium size pockets which is created by repeatedly folding and rolling dough with butter, forming numerous alternating layers.
During baking, the butter melts and produces steam. This steam, trapped within the dough layers, expands, causing the pastry to rise and creating the distinct, airy structure.

Charring the aromatics, blanching the bones, toasting the spices, and prepping the sides...4 hours later it was finished. Served with fresh thick cut noodles of course!!!
Everyone has their preferences, but I like my pho to be flavorful from the spices so I add extra.
